½ cup Cream Cheese 1 cup Mascarpone Cheese ½ cup Sugar Powdered ¾ teaspoon Vanilla Essence 1 tablespoon Gelatin 3 tablespoon Cold Water 12 Digestive Biscuits 5 tablespoon Butter Strawberries sliced for topping
Take a 10 cm spring form pan, i used normal round pan and lined with some plastic wrap.
Take biscuits in a blender and powder it, take it in a bowl. Add in melted butter and mix well.
Spoon the biscuit filling in the tin and spread it out evenly with a spoon. Put this in freezer while you work on the filling.
Take gelatin in a saucepan, add in some cold water and soak it for 5 mins. Now heat it on low heat till the gelatin is melted. Set aside for a min.
Now take cream cheese, mascarpone cheese in a bowl and cream using a spoon.
Add in powdered sugar and vanilla and cream again.
Now add in the melted gelatin and mix well.
Pour this over the base and put it in fridge for 2 hours or overnight,
Arrange some strawberries all over the top.
Slice and serve.
