    No Bake Mascarpone Cheesecake

    Finally i get a chance to use my homemade cream cheese to make this ultimate cheesecake. I am telling you, this is one the best ever cheesecake i ever made and enjoyed. It was so delicious. Loved it to the core. I made it today and every bit from the plate is over. It is that good.

    About this Recipe

    Mascarpone is a soft, acid-set cream cheese from Italy. It is classified as a traditional agricultural product (PAT) in Italy (traditional agri- food product). Mascarpone is a fresh cream-based triple-creme cheese. This was traditionally made from the fresh milk of cows that grazed on pastures filled with fresh herbs and flowers. The best option is still fresh milk, but a great Mascarpone can also be made with store-
    bought cream.

    Mascarpone is thought to have originated in the Italian region of Lombardy, between Lodi and Abbiategrasso south of Milan, in the late 16th or early 17th century. The name is commonly attributed to mascarpa, an unrelated milk product made from the whey of stracchino (a young, barely aged cheese), or to mascarpia, a word in
    the local dialect for ricotta. Mascarpone, unlike ricotta, is made from cream rather than whey.

    A cheesecake is a sweet dessert with one or more layers. The main and thickest layer is made of a soft, fresh cheese, eggs, and sugar.

    Ingredients for No Bake Mascarpone Cheesecake

    • Cream Cheese - ½ cup (RECIPE HERE)
    • Mascarpone Cheese - 1 cup (RECIPE HERE)
    • Sugar - ½ cup Powdered
    • Vanilla Essence - ¾ tsp
    • Gelatin - 1 tblspn
    • Cold Water - 3 tblspn
    • Digestive Biscuits - 10 to 12 biscuits
    • Butter - 5 tblspn melted
    • Strawberries sliced for topping
     

    This cheesecake is made with mascarpone cheese and cream cheese, both are made at home so it is even more delicious but a little time consuming. If you buy it from shops, then u can make this cheesecake in a matter of minutes. The original recipe calls for whipped cream as well. But i skipped it because i thought the mascarpone cheese will give the lightness the cheesecake want and also i added a little bit gelatin to make the cheesecake set in place.

    Ingredients for No Bake Mascarpone Cheesecake Recipe

    Cream Cheese :
    Cream cheese is a fresh, soft, smooth-tasting cheese made with cream or a milk-cream mixture. It has a mild, sweet flavour with a pleasant tang.

    Mascarpone Cheese :
    Mascarpone has a mildly sweet, almost nutty flavour with a fresh buttery flavour. It has a milder flavour than comparable cheeses such as ricotta and American cream cheese.

    Gelatin :
    Gelatine is used in some no-bake cheesecakes to give them a mousse-like texture. Cream cheese or cream cheese and whipped cream are used in other no-bake cheesecakes. This second type should firm up in the fridge without the addition of gelatine.

    How to Make No Bake Mascarpone Cheesecake

    1. Take a 10 cm spring form pan, i used normal round pan and lined with some plastic wrap.
    2. Take biscuits in a blender and powder it, take it in a bowl. Add in melted butter and mix well.
    3. Spoon the biscuit filling in the tin and spread it out evenly with a spoon. Put this in freezer while you work on the filling.
    4. Take gelatin in a saucepan, add in some cold water and soak it for 5 mins. Now heat it on low heat till the gelatin is melted. Set aside for a min.
    5. Now take cream cheese, mascarpone cheese in a bowl and cream using a spoon.
    6. Add in powdered sugar and vanilla and cream again.
    7. Now add in the melted gelatin and mix well.
    8. Pour this over the base and put it in fridge for 2 hours or overnight,
    9. Arrange some strawberries all over the top.
    10. Slice and serve.

    No Bake Mascarpone Cheesecake Step by Step

     

    Take all your ingredients, you need ½ tsp of gelatin as well
    First 1 line a 10 cm round tin with some plastic wrap,
    this helps you un mould the cake easily.
    If you have a spring form tin then you can skip this step
    First lets make the base, take digestive biscuits in a mixer
    powder it finely
    take it in a bowl
    Pour in melted butter
    mix so it looks like damp sand
    pour the mix into the tin
    smooth the base using back of a spoon
    base done..
    i put this in freezer till i make the actual cheesecake filling
     
     
     
    Soak ½ tsp of gelatin in 3 tblspn of cold water for 5 mins
    Now it is soaked
    Heat it till the gelatin is melted..Sorry for the blur pic
    Now it is melted..Leave aside to cool a bit
    Take cream cheese in a bowl, RECIPE HERE
    add in mascarpone cheese (RECIPE HERE)
    cream it well
    add in some powdered sugar..This is regular sugar which i powdered in blender
    add in some vanilla essence
    cream well
    add in the little cooled gelatin mix
    cream again
    Now take the biscuit base from freezer
    pour the cream cheese filling in
    smooth it evenly
    now put this in fridge for a couple of hours
    done
    Slice up some strawberries
    arrange it all over the cheesecake
    slowly remove the cheesecake using the plastic wrap
    place it over a plate
    slice and serve

      yes for this measurement u need just 1/2 tsp. U can use 1 tsp of agar agar.

      @picxyit is a setting agent. you can get it in any big supermaket. if you cannot find it, use china grass

      I tried making a Mascarpone Eggless Cheesecake with agar agar.The moment i started beatjng the mascarpone cheese on low speed it just curdled. Why? Because of that my entire cheesecake got spoilt and my cheesecake went waste 🙁

      Hi Aarthi, Can I use marie biscuit instead of digestive biscuit? Also, can I used mixed dry berries? Also, I just have mascorpone cheese... Will this alone be sufficient or addition of cream cheese is necessary?
