- 2 cups Oats Flour
- 1 cup Sooji
- 1 cup Curd / Yogurt
- 1 medium Carrots grated
- 2 Green Chilli chopped
- 3 tablespoon Coriander Leaves finely chopped
- a sprig Curry leaves
- Salt to taste
- ½ teaspoon Baking Soda
- Water - as needed
- For Seasoning:
- 1 teaspoon Oil
- 1 teaspoon Mustard Seeds / Kaduku
- 1 teaspoon Urad dal / Ulundu Paruppu
- ½ teaspoon Cumin Seeds / Jeerakam
- ¼ teaspoon Asafoetida / Kaya podi / Hing
Take oats flour in a bowl, add in sooji, curd, water, carrots, chillies, curry leaves, coriander leaves and water. Mix well to a thick batter.
Make seasoning by heating oil and crackling all ingredients given for seasoning. Let them sizzle for a min.
Pour this over the batter and mix well.
Now add more water if the batter is too thick. It should be pouring consistency.
Now add in baking soda and mix well.
Grease a idli plate with oil. Pour ladleful of batter in each mould and steam it for 8 to 10 mins.
Once it is steamed, remove it and let it cool for 2 mins.
Now dip a spoon in water and slide under the idlies.
Serve this with any chutney of your choice.
- Roasting oats slightly before making it into a powder enhances the taste.
- Don't powder the oats too much, make it a little coarse for better texture.
- Any vegetables can be chopped finely, sauted can be added into the idli.
- Baking soda or eno fruit salt can be used. If using eno salt, use 1 teaspoon of eno salt.
- Use thick curd for better texture.
