Pre-Prep - Begin by slicing a ripe banana into a small bowl and mashing it with a fork, not too smooth, just enough to keep some chunks for texture. Then get my bread slices, peanut butter, and butter ready on the counter so I don’t have to reach for anything while cooking.
Assembling the Sandwich - Spread a generous layer of peanut butter on one side of each bread slice. Then, spoon the mashed banana onto one slice and spread it out evenly. Finally, close the sandwich by placing the second slice on top, peanut butter side down.
Toasting on the Pan- Warm a pan on medium heat and melt about a tablespoon of butter in it. Once it sizzles slightly, place the sandwich in and gently press it down with a spatula. Cook both sides for 1–2 minutes until the bread is golden and the filling is warm and melty.
Serving- Once it’s nicely toasted, remove the sandwich and let it rest for a moment. Then slice it diagonally and serve it warm while the peanut butter is still gooey, it tastes best this way.
