Ingredients
  

For Muffin Batter

  • ½ cup Peanut Butter
  • 1 large Egg
  • 1 tablespoon Unsalted Soft Butter
  • ½ cup Sugar 100 grams
  • 1 cup Plain Flour 120 grams
  • 1 teaspoon Baking Powder
  • ¼ teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • ½ cup Milk
  • ¼ cup Semi Sweet Chocolate Chips

For Streusel Topping

  • 3 tablespoon Unsalted Butter
  • 3 tablespoon All Purpose Flour
  • 2 tablespoon Sugar
  • 3 tablespoon Peanut Powder ground
  • ¼ cup Semi Sweet Chocolate Chips

Instructions
 

  • Preheat oven to 190 degree C. Line 12 cup muffin tray with cupcakes cases and set aside.
  • Mix all the ingredients together for the streusel topping using a fork till it resembles coarse crumbles. Set aside in fridge till use.
  • Mix flour, baking powder and salt in a bowl and mix well. Set this aside. Take butter, peanut butter, egg, sugar, vanilla in a bowl and use a beater and whip till creamy. Add in milk and whip this up till creamy. Now add in the flour mix in and gently fold the batter. Don't over beat the mixture.
  • Use an ice cream scoop and scoop the batter into the cupcakes cases. Top it generously with streusel and bake this in oven for 18 to 20 mins.
  • Remove the tray from oven and let it cool in tin for 10 mins. Serve warm.
