    I simply love all things peanut. Peanut butter or raw peanuts or peanut powder, they are in my shelf. Mostly i use them in my cooking and baking. They add such a nutty and wonderful taste to the baked goodies.

    These muffins are my latest bake and it is one of the best thing I ever baked with peanut. It has two form of peanuts, like peanut butter and peanut powder. Plus these muffins have a crunchy peanut streusel topping, how good that can be.

    About Peanut Butter Muffins

    Looking for high protein yet tasty muffin, this is the answer. This peanut butter muffins is too good to resist. This muffin has peanut butter in the batter for the muffins and peanut butter in the streusel topping. Check my peanut butter bars.

    The batter is made with peanut butter, butter, eggs, sugar, plain flour, raising agent and milk. Since it has peanut butter added, very little butter is used. Peanut butter helps to make this muffins super light and moist. I specially loved the crispy peanut streusel topping which gives a texture to the soft muffins. Enjoy this muffins with a cup of milk for a wholesome breakfast. Check my peanut butter granola.

    Meal prep - you can make a batch of this and store in fridge or freezer.

    Peanut Butter Muffins Ingredients

    Flour - I used plain flour for the muffin. You can use whole wheat flour for more healthy and wholesome option.

    Sugar - Refined sugar gives perfect result in this recipe. You can choose to use caster sugar as well.

    Peanut Butter - Smooth or crunchy peanut butter can be used in the batter. Peanut butter along with butter gives spongy muffins.

    Egg - egg gives fluffy texture to the muffins. For eggless alternative, you can use ¼ cup of yogurt.

    Milk - I used regular full fat milk. you can add soy milk, almond milk or oat milk.

    Butter - Since the muffin has peanut butter added, you don't need much butter. Oil can be used for lighter option.

    For Streusel Topping - Peanut butter, flour, butter, sugar and chocolate chips is used for the streusel topping. Rolled oats can be added in the topping.

    How to Make Peanut Butter Muffins (Stepwise Pictures)

     
    Line a 12 cup muffin tray with cupcake cases
     
     
    Take your streusel topping ingredients
    take flour and peanut powder in a bowl
    add in cold butter
    use a fork to crumble it together
    now it all crumbled
    spoon in some sugar
    add in chocolate chips

    mix well..chill this in fridge till needed
    take your muffin batter ingredients
    Take flour in a bowl
    add little salt
    add in baking powder
    mix well..set aside
    take butter in a bowl
    add in peanut butter
    add sugar
    some vanilla
    and an egg
    use a beater whip this well
    now it has got creamy
    add in milk
    whip well
    add in the flour mix in
    fold gently
    now it is mixed well
    add in chocolate chips
    fold gently
    use a icecream scoop to scoop the batter
    like this
    fill muffin moulds
    take the streusel topping
    top over the muffins

    time to bake

    now it is baked

    Equipment

    • 12 cup muffin pan
    • Muffin liners
    • Mixing Bowl

    Ingredients

    For Muffin Batter

    • ½ cup Peanut Butter
    • 1 large Egg
    • 1 tbsp Unsalted Soft Butter
    • ½ cup Sugar 100 grams
    • 1 cup Plain Flour 120 grams
    • 1 tsp Baking Powder
    • ¼ tsp Salt
    • 1 tsp Vanilla Extract
    • ½ cup Milk
    • ¼ cup Semi Sweet Chocolate Chips

    For Streusel Topping

    • 3 tbsp Unsalted Butter
    • 3 tbsp All Purpose Flour
    • 2 tbsp Sugar
    • 3 tbsp Peanut Powder ground
    • ¼ cup Semi Sweet Chocolate Chips

    Instructions

    • Preheat oven to 190 degree C. Line 12 cup muffin tray with cupcakes cases and set aside.
    • Mix all the ingredients together for the streusel topping using a fork till it resembles coarse crumbles. Set aside in fridge till use.
    • Mix flour, baking powder and salt in a bowl and mix well. Set this aside. Take butter, peanut butter, egg, sugar, vanilla in a bowl and use a beater and whip till creamy. Add in milk and whip this up till creamy. Now add in the flour mix in and gently fold the batter. Don't over beat the mixture.
    • Use an ice cream scoop and scoop the batter into the cupcakes cases. Top it generously with streusel and bake this in oven for 18 to 20 mins.
    • Remove the tray from oven and let it cool in tin for 10 mins. Serve warm.
