Peanut Butter Streusal Muffins Recipe – Peanut Butter Muffins Recipe

I simply love all things peanut. Peanut butter or raw peanuts or peanut powder, they are in my shelf. Mostly i use them in my cooking and baking. They add such a nutty and wonderful taste to the baked goodies. These muffins are my latest bake and it is one of the best thing i ever baked with peanut. It has two form of peanuts, like peanut butter and peanut powder. Plus these muffins have a crunchy peanuty streusal topping, how good that can be..

The topping has all kind of good things like butter, sugar, chocolate and ofcourse peanut powder. I used The
J.M. Smucker Company Jif® Peanut Powder.  These are really good, they have 85% less fat that regular peanut butter and 7 to 9 grams of protein. They make a great addition to baking or smoothies..You can buy this from walmart.

Preparation Time : 10 mins
Baking Time : 18 to 20 mins
Makes : 12 muffins

Ingredients:

For Muffins:
Peanut Butter – 1/2 cup
Egg – 1
Unsalted Soft Butter – 1 tblspn
Sugar – 1/2 cup / 100 grams
All Purpose Flour / Maida – 1 cup / 120 grams
Baking Powder – 1 tsp
Salt – 1/4 tsp
Vanilla Essence – 1 tsp
Milk – 1/2 cup
Semi Sweet Chocolate Chips – 1/4 cup
For Streusal Topping:
Unsalted Cold Butter – 3 tblspn
All Purpose Flour / Maida – 3 tblspn
Sugar – 2 tblspn
Jif® Peanut Powder – 3 tblspn
Semi Sweet Chocolate Chips – 1/4 cup


(My 1 cup measures 240 ml)

Method:

Preheat oven to 190 degree C. Line 12 cup muffin tray with cupcakes cases and set aside.
Mix all the ingredients together using a fork till it resembles coarse crumbles. Set aside in fridge till use.
Mix flour, baking powder and salt in a bowl and mix well. Set aside.
Take butter, peanut butter, egg, sugar, vanilla in a bowl and use a beater and whip till creamy.
Add in milk and whip this up till creamy. 
Now add in the flour mix in and mix well.
Use a icecream scoop and scoop the batter into the cupcakes cases.
Top it generously with streusal and bake this in oven for 18 to 20 mins.
Remove it and let it cool in tin for 10 mins.
Serve warm.

Take your streusal topping ingredients
take flour and peanut powder in a bowl
add in cold butter
use a fork to crumble it together
now it all crumbled
spoon in some sugar
add in chocolate chips
mix well..chill this in fridge till needed
take your muffin batter ingredients
Take flour in a bowl
add little salt
add in baking powder
mix well..set aside
take butter in a bowl
add in peanut butter
add sugar
some vanilla
and an egg
use a beater whip this well
now it has got creamy
add in milk
whip well
add in the flour mix in
fold gently
now it is mixed well
add in chocolate chips
fold gently
use a icecream scoop to scoop the batter
like this
fill muffin moulds
take the streusal topping
top over the muffins
time to bake
now it is baked
