- 2 large Potatoes peeled, cubed & boiled
- 2 tablespoon Oil
- ½ teaspoon Fennel seeds / saunf / sombu
- 1 piece Cinnamon / Pattai
- 1 Bay leaf
- 1 medium Onions sliced thinly
- 2 slit Green chilli
- 1 tablespoon Ginger Garlic Paste
- 2 Tomatoes chopped finely
- 2 teaspoon Red Chilli Power
- 1 teaspoon Turmeric Powder / Manjal Podi
- 2 teaspoon Coriander Powder / Malli Podi
- 1 teaspoon Garam Masala Powder
- Salt to taste
- Coriander leaves for garnishing
- To grind :
- ½ cup Fresh Coconut grated
- 10 Cashews
- 2 teaspoon Fennel Seeds / Saunf / Sombu
Take grinding ingredients in a blender and make it into a fine puree. Set aside.
Heat oil in a pan. Add in fennel seeds,cinnamon, bay leaf and let it sizzle.
Add in onions and saute till golden.
Add in ginger garlic paste and saute for a min.
Add in tomatoes and chillies. Saute till mushy.Add in salt and mix well.
Now add all spice powders and give a good mix.
Pour water and bring it to boil. Add in potatoes and coconut masala and mix well.
Simmer for 5 to 8 mins.Add in coriander leaves and serve.
