Potato peas samosa also known as aloo matar samosa is a crispy and tasty tea time snack made with boiled potatoes, green peas, spices and samosa sheets. It is deep fried until golden crispy and tastes best with green chutney, tomato ketchup or a hot cup of tea.
Start by making the filling. Heat oil in a pan and add in fennel seeds and allow them to splatter.
Add in sliced onions and saute for 3 to 4 minutes till onions gets slightly translucent.
Add in ginger garlic paste and saute until raw smell leaves. It will take around 2 minutes. Add salt and sugar and mix well into the onions.
Now add in all the spice powder and mix well. stir fry the spices for 1 minute.
Add in peas and saute for 2 minute. Since I used frozen green peas it cooks faster. Now add in cooked mashed potatoes and mix well with the masala. Taste and adjust salt at this point.
Finally Add in coriander leaves and mix well. Take it off the heat. Filling done.
Make flour paste. Mix flour and water to form into a paste like. We will use this paste as glue to stick on the sheets.
Now lets fill and shape the samosa sheet. I am using store bought samosa sheets. You have to remove the sheets from freezer atleast 30 minutes before making the samosa. So it thaws. Also once you open the samosa sheets, keep them covered with a damp cloth to prevent them from drying.
Take a sheet of samosa patti, lay it in front of you, spoon some filling in and fold it like a samosa.
When u fold it to the end, apply the paste made with flour and water and fold it to stick it.
Now heat some oil for deep frying, once the oil gets hot, drop in the samosa, only few at a time and fry till golden brown.
Remove the fried samosa using a slotted spoon. Strain on some paper towel to remove excess oil and set aside.
Serve hot samosa with ketchup.
