Quinoa Fried Rice Recipe is also known as quinoa stir fry or stir fry quinoa with vegetables which is a healthy alternative for fried rice. This is made with cooked quinoa, mixed vegetables, shallots and green chillies. You can customise the fried rice by adding cooked chicken, prawns, eggs to make it more wholesome. Ingredients
  

  • 1 cup Quinoa
  • 1 tablespoon Oil
  • 1 medium Onion chopped finely
  • 2 no Green Chillies chopped finely
  • 1 tablespoon Ginger Garlic Paste
  • 1 medium Carrot chopped finely
  • 6 no Green Beans chopped finely
  • ½ cup Capsicum chopped finely
  • Salt

Instructions
 

  • Take quinoa in a bowl and wash it really well. Take the washed quinoa in a pot, cover with 2 cups of water and bring it to a full boil. Cover and simmer the pot for 10 minutes on low heat. Now quinoa is cooked, gently fluff up the quinoa using a fork. Set aside.
  • Heat oil in a pan, add onions and chillies. cook for couple of mins. Add in ginger garlic paste and mix well.
  • Add veggies, salt and cook till done. Add in cooked quinoa and toss well, serve.

Notes

  • You can cook the quinoa in bulk and store in fridge upto a week.
  • You can use cabbage, capsicum, carrots, beans in this recipe.
  • Cooked chicken, prawns or cooked eggs in this fried rice for taste.
  • Cooked tofu or paneer can be used in this for wholesome protein rich meal.
  • Season fried rice with soy sauce and black pepper to taste.
