Bamboo Biryani Recipe

Fragrant Chicken Biryani cooked inside a bamboo which taste so amazing and it is super delicious.

Ingredients

FOR RICE

  • 2 cups Basmati Rice
  • 1 tsp Fennel seeds
  • 1 piece Cinnamon
  • 4 piece Cardamom
  • 4 piece Cloves
  • Salt

FOR CHICKEN MASALA

  • 4 tbsp Oil
  • 4 tbsp Ghee
  • 1 tsp Fennel seeds
  • 1 piece Cinnamon
  • 4 piece Cardamom
  • 4 piece Cloves
  • 3 large Onion
  • 4 Green Chillies
  • 2 tbsp Ginger Garlic Paste
  • 2 tbsp Chilli Powder
  • 1 tsp Turmeric powder
  • 2 tbsp Coriander powder
  • 1 tbsp Garam Masala Powder
  • 2 tsp Cumin powder
  • 2 large Tomatoes
  • ½ cup Curd
  • ¼ cup Mint Leaves
  • ¼ cup Coriander Leaves
  • 1 Kg Chicken with bones
  • Salt

FOR MILK MIX

  • ¼ cup Milk
  • 1 tsp Biryani extract
  • 4 drop Yellow food colour

Instructions

  • Wash and Soak rice for 30 mins.
  • Heat oil and ghee in a kadai. Add in whole spices and leave them to sizzle.
  • Add in onions and saute till golden brown.
  • Add in ginger garlic paste and chillies and cook till golden.
  • Add in tomatoes and cook till it gets mushy.
  • Add in spice powders, salt and mix well.
  • Add in yogurt and cook for 2 mins.
  • Add in chicken and toss well in the masala. Add in coriander and mint leaves.
  • Cover and cook on low heat till chicken is cooked. Set aside till needed
  • Mix milk with food colour, biryani extract and set aside.
  • Now bring lots of water to a boil. Add salt and whole spices.
  • Add in soaked rice and cook till rice is 90% cooked. It will take around 6 to 7 mins.
  • Now drain the rice and set aside.
  • Take bamboo, fill little rice, top with chicken masala and more rice. Pour milk mix.
  • Cover and place over cooker top so it can steam just like you make puttu.
  • Steam for 15 to 20 mins.
  • Remove and serve hot.

Notes

  1. Cook rice till 90 percent. Taste the rice, it should be cooked completely yet it should have a little bite. 
  2. Don't over cook the rice else it will get mushy when it is steaming.
  3. When you are filling make sure you have half masala and half rice for perfect balance.
  4. You can top the rice with fried nuts, raisins and fried onions.
  5. You can use vegetables or mutton instead of chicken.
