    Bamboo Biryani

    "Fragrant Chicken Biryani cooked inside a bamboo which taste so amazing and it is super easy to make. Layer of rice and chicken masala steamed together inside a piece of bamboo which creates this masterpiece."

    I was eyeing for this recipe for a very long time. Finally came across the bamboo mould when i was browsing through amazon. I found out that it is used for making bamboo biryani as well as steamed puttu. So bought couple of bamboo and as soon as i got it, made bamboo biryani.

    It is relatively simple process to make biryani at home in bamboo. All you need is to follow the process similar to dum biryani and assemble it in a bamboo. You need to cook the rice till 90% and the remaining 10% is cooked when steaming.

    HOW TO MAKE BAMBOO CHICKEN BIRYANI

    1. Basmati Rice: cook rice in salted water with spices till rice is cooked. drain and set aside.
    2. Chicken Masala: prepare chicken masala cooked in onion tomato masala.
    3. Layering: layer rice and chicken masala and steam together for 15 to 20 mins.
    4. Serve: serve the biryani hot with some onion raita.

    POINTS TO REMEMBER BEFORE MAKING BAMBOO BIRYANI

    1. Cook rice till 90 percent. Taste the rice, it should be cooked completely yet it should have a little bite.
    2. Don't over cook the rice else it will get mushy when it is steaming.
    3. When you are filling make sure you have half masala and half rice for perfect balance.
    4. You can top the rice with fried nuts, raisins and fried onions.
    5. You can use vegetables or mutton instead of chicken.

    Ingredients

    FOR RICE

    • 2 cups Basmati Rice
    • 1 tsp Fennel seeds
    • 1 piece Cinnamon
    • 4 piece Cardamom
    • 4 piece Cloves
    • Salt

    FOR CHICKEN MASALA

    • 4 tbsp Oil
    • 4 tbsp Ghee
    • 1 tsp Fennel seeds
    • 1 piece Cinnamon
    • 4 piece Cardamom
    • 4 piece Cloves
    • 3 large Onion
    • 4 Green Chillies
    • 2 tbsp Ginger Garlic Paste
    • 2 tbsp Chilli Powder
    • 1 tsp Turmeric powder
    • 2 tbsp Coriander powder
    • 1 tbsp Garam Masala Powder
    • 2 tsp Cumin powder
    • 2 large Tomatoes
    • ½ cup Curd
    • ¼ cup Mint Leaves
    • ¼ cup Coriander Leaves
    • 1 Kg Chicken with bones
    • Salt

    FOR MILK MIX

    • ¼ cup Milk
    • 1 tsp Biryani extract
    • 4 drop Yellow food colour

    Instructions

    • Wash and Soak rice for 30 mins.
    • Heat oil and ghee in a kadai. Add in whole spices and leave them to sizzle.
    • Add in onions and saute till golden brown.
    • Add in ginger garlic paste and chillies and cook till golden.
    • Add in tomatoes and cook till it gets mushy.
    • Add in spice powders, salt and mix well.
    • Add in yogurt and cook for 2 mins.
    • Add in chicken and toss well in the masala. Add in coriander and mint leaves.
    • Cover and cook on low heat till chicken is cooked. Set aside till needed
    • Mix milk with food colour, biryani extract and set aside.
    • Now bring lots of water to a boil. Add salt and whole spices.
    • Add in soaked rice and cook till rice is 90% cooked. It will take around 6 to 7 mins.
    • Now drain the rice and set aside.
    • Take bamboo, fill little rice, top with chicken masala and more rice. Pour milk mix.
    • Cover and place over cooker top so it can steam just like you make puttu.
    • Steam for 15 to 20 mins.
    • Remove and serve hot.

    10)Cook till masala is done.

    11)Add in chicken pieces.

    12)Coat till chicken is well coated in masala.

    13)Cover and cook on low heat

    14)Cook till chicken is cooked.

    15)Now cook the rice. bring water to a boil, add in whole spices and lots of salt.

    16)Add in soaked rice.

    17)Cook till rice is 90% cooked.

    18)Mix milk with food colour, biryani extract.

    19)Now time to assemble the biryani

    20)Fill little rice inside the bamboo

    21)Add in chicken masala

    22)Top with more rice.

    23)Add little milk over top.

    24)Cover

    25)Place over the cooker. Steam for 20 mins.

    26)now unmould.

    27)Yummy biryani
