    Pineapple Jam

    Making homemade jams are always my favourite things to try at home. I don't like the thick, jelly like jam which you get in stores. They don't taste like fruit jams at all, I love the real fruits getting cooked as jam, they taste so fresh and fruity. 

    My Perimma makes jam from over ripe fruits which are collected at the bottom of the fruits bowls. She uses over ripe bananas, apples, grapes and stuff like that. Those jam taste so heavenly when made as jam sandwiches, toasted with butter.

    One of my favorite fruit jam is pineapple. They smell so heavenly and taste so yum when made into jams. I have already made tomato jam and orange jam. They turned out so good that I couldn't stop making a bottle of jam for myself. Because of my love for homemade jams, I have tried an apple jam yesterday and they were yum.

    About Pineapple Jam

    Pineapple is a fruit which is perfect for making jam. It is fleshy and has a zingy tropical fruit flavour. It is one of the most loved jam around the world. Whenever I have excessive pineapple on hand, I either make this jam, pineapple pulissery or freeze pineapples for later use.

    Making pineapple jam is super easy all you need is fresh pineapples, sugar, lemon and optional pineapple extract and food colour. Puree pineapples and cook with sugar and lemon till thickened. Thats it, fruity pineapple jam is ready.

    Naturally pineapple doesn't have pectin like berries or cranberries. So The jam made using pineapple is supposed to be pourable like preserves and not like jelly. But if you want set pineapple jam, I have shared how to use pectin when making jam in this blog post.

    Pineapple Jam Ingredients

    Pineapples - use ripe fresh pineapple for making jam. For checking the ripeness of the fruit, smell it, it should be fragrant. Remove the crown and skin. Chop into pieces before using.

    Sugar - the quantity of sugar depends on the sweetness you prefer the jam to be. The more sugar you add the more thick the jam will be. You can use brown sugar as well. But the colour will be different.

    Lemon - lemon juice helps with preserving the jam and adds a tart taste to the jam.

    Optional - yellow food colour and pineapple extract is added in the pineapple jam to make it bright yellow colour. But you can skip it.

    How to Cut Pineapple

    Some people may find it difficult to cut open a pineapple. But actually it is pretty easy to cut and peel a pineapple. Here I am sharing how you can peel, cut a pineapple.

    Picking Pineapple - It is easy to choose pineapple. You have to pick the ripe and aromatic pineapple. Look for yellow pineapple. Try and remove a petal from the crown of the pineapple, it should pop right out. If it pops out easily then the pineapple is ripe. Also smell the pineapple it should smell fruity.

    Knife of choice - use serrated knife also known as bread knife. Serrated knife is great to remove the tough skin of the pineapple.

    Removing crown - first remove the crown of the pineapple. You can twist it and easily remove. Now use the knife to cut the top and bottom of the pineapple.

    Removing pineapple peel - You can cut the pineapple in half which makes it easy to remove the peel. Place the halved pineapple on the board. Use the serrated knife to gently slice the peel of the pineapple. Start with the outside and as you slice you can see how much flesh you are removing. So you can adjust it accordingly. Gently twist the pineapple and remove all the peels. Don't be bothered by removing the specks on the pineapple. We can remove it after the peels are removed.

    Chopping - once the peel is removed, check the pineapple if there is any hard specks. If there is little specks it is not a problem. But if you want to remove it you can use a butter knife to pick them off. Once it is removed, chop them into small pieces and use accordingly.

    How to Make Pineapple Jam (Stepwise Pictures)

    Pineapple Puree

    1)Take the chopped pineapple in a blender and make it into a fine puree. You don't need to add water when grinding.

    If you are making a big batch of pineapple jam, then puree the pineapple in batches.

    Cooking Pineapple

    2)Take the pureed pineapple in a pan. If there is any chunky bits of pineapple, it is not an issue.

    3)Add in sugar to taste. You can use brown sugar or unrefined sugar in this. If you are using brown sugar then the colour of the jam will be not yellow.

    4)Mix the sugar into the pineapple puree. As you mix the mixture will loosen in texture and it will become watery. That is not an issue, keep mixing and keep cooking.

    Making Pineapple Jam

    5)As the sugar melts, the jam may become lighter in colour and texture. You have keep mixing and cooking. The mixture may bubble up, so it is best to cover the pan with a lid.

    6)Even though this is optional. You can add a pinch of yellow food colour for the bright colour. You can skip this if you don't want too.

    7)The texture of the jam depends on you. if you want the jam to be thick you can continue cooking it till it thickens. Else you can take it off the heat.

    Turn off the heat and add in lemon juice, pineapple extract and mix well.

    8)Pineapple jam is ready to serve. You can serve it immediately or store in an air tight glass bottle in fridge.

    Pro Tip: as the jam cools the jam will thickens even more.

    9)Enjoy.

    Pineapple Jam with Pectin

    Pectin is a complex starch derived from plants. It's used to gel foods like fruit preserves, jams and jelly, gummies and candies. Pectins that are sold in grocery stores are derived from fruit like citrus peels like oranges, grapefruits which is labeled as fruit pectin.

    Commericially sold jams and preserved has pectin added in them. Using pectin when making jams allows them to set. Jams made with pectin has more sugar added which produces bulk quantity.

    Many of you asked me to share pineapple jam made with pectin. So here is a recipe for making jam using pectin.

    Ingredients for Pineapple Jam with Pectin

    • 3 cups Pineapple Puree
    • 3 cups Sugar
    • 50 grams Pectin
    • 1 tbsp Lemon Juice

    How to Make Pineapple Jam with Pectin

    Mix powdered pectin with sugar and set aside. Take pineapple puree in a large pot. Bring it to a full boil. Once it starts to cook, boil them for 1 minute. Now add in the sugar pectin mixture and boil on high for 2 minutes. It should be on rolling boil. once 2 minutes is up, turn off the heat. Pour the jam into sterlized glass jars. Cover loosely with lids and let it cool for few hours. Now cover them tightly with lid and store.

    Variations

    For making pineapple jam healthier. You can use unrefined sugar or powdered jaggery when making jam. The above picture is pineapple jam made with unrefined brown sugar.

    Expert Tips

    • Pick ripe juicy pineapple for making jam which makes the jam aromatic and tasty. 
    • You can use unrefined sugar or brown sugar for making pineapple jam. It will change the colour but it is a healthy option.
    • Food colouring and extracts are optional.
    • You can add chopped pineapple into the pineapple puree when cooking jam for chunky texture. 
    • Always store jam in clean, dry, air tight bottle in fridge. Use dry spoon when handling jam. 

    Storage & Serving

    You can store this at room temperature for 2 to 3 days. It can be stored in fridge for 2 to 3 months. 

    You can enjoy this jam with toasted bread with some butter.

    Ingredients

    • 1 medium Pineapple yields 4 cups of pineapple chunks
    • 2 cups Sugar
    • a pinch Yellow Food Colouring
    • 2 tbsp Lemon Juice
    • 1 tsp Pineapple Extract optional

    Instructions

    • Peel and chop pineapple cubes. Take them in a blender and make them into a coarse puree.
    • Now pour them in kadai, add in sugar and mix well. Heat it up. Cook them for 10 to 15 mins or so till the sugar is dissolved and get little thick. Now add in food colouring and mix well. Switch off the flame and add in the lemon juice. Mix well.
    • Allow it so it cool down completely. Now take a clean dry glass jar and store this jam in it. Enjoy with warm buttered toast or as a sandwich.

        You must have over cooked it. Add little more pineapple puree and bring it to a boil. Turn off the heat.
