Snowball Cookies Recipe | Russian Tea Cakes Recipe
Melt in mouth russian tea cakes or snowball cookies is an eggless bite size morsels filled with nuts and rolled in thick coating of confectioners sugar.
Preheat oven to 200 degree C. Line a baking pan with parchment paper and set aside.
Take butter, ¼ cup powdered sugar and vanilla in a bowl and cream really really well.
Now add in salt and mix well.
Add in nuts and mix well.
Add in flour and mix well.
Take small portion and roll it into a ball. Arrange on baking tray.
Bake for 10 to 12 mins.
Now remove it from oven and roll them in powdered sugar. You can double roll them in sugar as the cookies cool down.
Now store in air tight container.
Notes
Roll the cookies in powdered sugar as soon as they come out of the oven. This will make the cookie get a sugar coating on them. Leave them to cool and then re roll the generously in powder sugar to create a thick snow like coating.
You can use finely chopped pecan instead of cashews.
