    Snowball Cookies also known as Russian Tea Cakes or Mexican Wedding Cookies are melt in mouth cookies made using butter, cashews, flour and sugar. These make a great pair with your cup of coffee or tea.

    This is an easy cookies to make. it is called as russian tea cakes which is often served with a cup of tea or coffee. It is an eggless recipe and taste so buttery and delicious.

    I am in love with this cookies, they are like perfect. Sweet, buttery, soft and really yummy. I made this yesterday and it got over immediately. It is so easy to put together as well. You just need a handful of ingredients to make this, you can make them any time as you like. 

    What are Snowball Cookies?

    Snowball cookies is a ball shaped cookie which just melts in mouth. These are made using butter, sugar, flour and some kind of nuts like pecans, walnuts or cashews. The cookies are coated in powdered sugar as soon as come out of oven and also once they are cooled which creates a thick sugar coating on them.

    Russian Tea Cakes & Snow Ball Cookies

    Both cookies are same but with different name. This cookies is soft in the center and is normally made egg free.

    Why are they called Snowball?

    Cookies are baked and coated in powdered sugar. These cookies looks like mini snow balls because of their sugary coating. Hence the name.

    How to Make Snowball Cookies

    • Preheat oven to 200 degree C. Line a baking pan with parchment paper and set aside.
    • Take butter, ¼ cup powdered sugar and vanilla in a bowl and cream really really well.
    • Now add in salt and mix well.
    • Add in nuts and mix well.
    • Sprinkle in flour and mix well.
    • Take small portion and roll it into a ball. Arrange on baking tray.
    • Bake for 10 to 12 mins.
    • Now remove it from oven and roll them in powdered sugar. You can double roll them in sugar as the cookies cool down.
    • Now store in air tight container.

    Ingredients
      

    • ½ cup Unsalted Butter 110 grams
    • ¼ cup Sugar 50 grams
    • 1 tsp Vanilla Essence
    • a pinch Salt
    • 1 cup All Purpose Flour (maida) 120 grams
    • 1 cup Pecan or Cashews
    • 1 cup Confectioners Sugar

    Instructions
     

    • Preheat oven to 200 degree C. Line a baking pan with parchment paper and set aside.
    • Take butter, ¼ cup powdered sugar and vanilla in a bowl and cream really really well.
    • Now add in salt and mix well.
    • Add in nuts and mix well.
    • Add in flour and mix well.
    • Take small portion and roll it into a ball. Arrange on baking tray.
    • Bake for 10 to 12 mins.
    • Now remove it from oven and roll them in powdered sugar. You can double roll them in sugar as the cookies cool down.
    • Now store in air tight container.

    Notes

    • Roll the cookies in powdered sugar as soon as they come out of the oven. This will make the cookie get a sugar coating on them. Leave them to cool and then re roll the generously in powder sugar to create a thick snow like coating.
    • You can use finely chopped pecan instead of cashews.

      Can we skip cornflour?
      If we cant alternative pls... wats the use of cornflour here?
      does it sticks? Parchment paper must???

      Can i bake this at 160 Deg as i dont have 170 deg in my oven.Also can we roll the cookies in normal powdered sugar instead of icing sugar?

      @Anonymousyes u can bake at 160 degree for first few mins then increase it to 180 and bake
