Equipment

1 Mixing Bowl
1 Hand Whisk or Electric Beater
1 Ice cream scoop for dividing the batter
1 12 cup Muffin Tray
Muffin Liners or Cupcake Cases

Ingredients

  • ½ cup Unsalted Butter 110 grams
  • 1 cup All Purpose Flour 120 grams
  • ¾ cup Sugar 150 grams
  • 2 teaspoon Vanilla Extract
  • 2 large Eggs
  • ½ cup Milk 120 ml
  • 1 teaspoon Baking Powder
  • ½ cup Tutti Fruiti or nuts, chocolates

Instructions
 

  • Preheat oven to 180 degree C | 356 degree F. Line muffin tray with cupcake wrappers and set aside. Take tutti fruitti in a bowl and sprinkle a tblspn of flour over it. Toss well and set aside.
  • Take butter, sugar, vanilla in a bowl and cream really well. Add one egg at a time and beat till creamy. Now add in flour, baking powder and mix gently. Pour in milk and fold gently. Add in tutti fruity and mix well.
  • Use an ice cream scoop to fill the muffin cases right to the top. Top with some tutti fruity. Now pop this in oven and bake for 20 to 25 mins. Remove it and cool it on a wire rack. Store it in an air tight container.

Notes

  • Instead of vanilla, you can use any flavoured extracts of choice. 
  • You can substitute plain flour with whole wheat flour. Or you can use half plain flour and half wheat flour.
  • Cream the butter and sugar really well till fluffy for soft muffins. Add one egg at a time and even mixing. 
  • Tutti frutti can be substituted with any dried fruits, nuts or chocolate chips. 
  • Don't over bake the muffins else it will dry out. Insert a toothpick to check for the doneness. If toothpick comes clean then muffins are baked. 
  • Never over mix muffin batter, else it will turn out dense. It is always best to under mix muffin batter than over mixing. 

Storage

Tutti frutti muffins can be stored at room temperature for upto 2 days. It can be stored in fridge upto a week, reheat in microwave for 10 seconds before serving.
