Vattayappam Recipe | Steamed Rice Cake | Kerala Style

Vattayappam is a Kerala style steamed rice cake made with fermented rice batter which has yeast in them which is similar to Appam. Traditionally it is served during Christmas or Easter for breakfast. Sweet vattayappam is made with more sugar and dried fruits like raisins added on top before serving. Vattayappam is usually served with chicken curry, mutton stew or sambar. Ingredients
  

For Rice Flour Paste

For Grinding

  • 1 cup Fresh Coconut grated
  • ½ cup Cooked Rice
  • Salt to taste
  • tablespoon Sugar
  • 1 cup Water
  • 1 teaspoon Dry Yeast
  • ½ teaspoon Baking Powder optional
  • 1 teaspoon Oil for greasing the pan

Instructions
 

  • Take rice flour in a bowl, add water and mix well. Set aside for 10 minutes for the rice flour to soak.
  • Take cooked rice and coconut in a blender and grind to a smooth paste. Add rice flour mixture, salt, sugar, yeast and grind well. Pour this into a bowl. The batter has to be little thick like idli batter.
  • Now cover and let this ferment for 3 to 4 hours. Once fermented mix the batter, add water if needed. Add baking powder if needed and mix well.
  • Grease few round shallow moulds for steaming. Divide the batter between greased pan and steam for 30 mins. Remove and cool for 5 mins. Now un mould slice and serve with chicken curry.

Notes

  • Usually vattayappam is made with soaked rice which is ground to a paste and then fermented. This is fast instant version.
  • Don't add too much yeast it may give sour taste.
  • If you over steam it may get dry.
  • Store steamed vattayappam in a casserole to keep warm.
