Vegetable kathi roll, also known as veg frankie or vegetable wrap, is a popular and delicious Indian street food. It is made using soft parathas which are filled with a spicy vegetable filling and rolled perfectly that you have any time of the day. It is also travel friendly in that you can simply wrap them in foil or butter paper to keep them fresh and mess - free.

Ingredients

  • 1 tablespoon Oil
  • 4 no Rumali Roti / Tortillas / Chapatis
  • 4 no Eggs

For Vegetable Filling

  • 1 tablespoon Oil
  • 1 large Onion peeled and sliced thinly
  • 1 large Tomato sliced thinly
  • 1 large Carrot sliced in julienne
  • 1 cup Cabbage sliced thinly
  • 1 tablespoon Pav Bhaji Masala Powder
  • 1 teaspoon Salt to taste
  • 1 teaspoon Lemon Juice to taste
  • 3 tablespoon Coriander leaves finely chopped

Instructions
 

  • Start by making the filling. Heat oil in a kadai. Add in onions along with all veggies. Season with some salt and toss well for 5 to 8 mins till the veggies are cooked.
  • Add in pav bhaji masala and mix well for a min. Add in lemon juice, coriander and mix well. Filling done.
  • Crack open eggs and beat them well. Set aside.
  • Heat a tawa, drizzle some oil over it.place a roti on the tawa, pour some egg over it, spread it evenly, flip over and cook till the eggs are done.
  • Now remove to a plate, spoon some filling over it, cover it from all the sides, roll it. Serve.
