Carrot halwa also known as Gajar Ka Halwa is a popular Indian sweet also known as carrot pudding made using carrots, sugar, ghee and fried nuts. Festive occasions like Diwali or any special occasions is not fulfilled without this wonderful sweet. Carrot halwa with condensed milk makes best tasting carrot halwa. This halwa taste amazing when served with a scoop of vanilla ice cream.
Heat 2 tablespoon ghee in a kadai. Add in cashews and fry till light golden, add in raisins and fry for few seconds. Strain the dried fruits and nuts and set aside.
Now in the leftover ghee, Add in grated carrot and fry for 5 mins. Pour in milk and bring that to boil.
Simmer the flame and cover it with a lid. Let this cook for 15 mins until the carrot is cooked through and milk is evaporated.
Now add in sugar and condensed milk and mix well. Add ghee little at a time and mix well. Cook this whole thing for 10 mins till the mix leaves the sides.
Add in cardamom powder and fried nuts and mix well.
Switch off the flame and serve hot or cold.
