Eggless Bread Pudding Recipe

Bread pudding is considered to a classic comforting dish all over the world. Traditional bread pudding is made using bread, milk, eggs, cream and sugar. But not everyone eat eggs, so here is a recipe for eggless bread pudding that anyone can enjoy. This bread pudding is made with milk, sugar, custard powder, vanilla and butter. Equipment

Ingredients

  • 5 slices Bread (preferably brioche) cubed

For Custard

For Mixing Custard powder

  • 2 tbsp Custard Powder
  • ¼ cup Milk

For Topping

  • 3 tbsp Raisins
  • 3 tbsp Rum or Orange Juice (for soaking raisins)
  • 3 tbsp Almonds (topping)
  • 1 tbsp Sugar

Instructions

  • Preheat the oven to 380°F / 190°C. Soak raisins in rum or orange juice for 15 mins till it plumps up. Cut your bread into chunks and set aside. Mix custard powder with ¼ cup milk so that no lumps are formed.
  • Now for making custard. Take milk in a sauce pan, add sugar, vanilla and butter.. Heat the milk so that the butter melts completely. Now pour the prepared custard mixture in the hot milk and whisk constantly so that no lumps are formed. Now remove this from heat and set aside. 
  • Take a baking dish and butter it slightly. Lay the bread pieces in the dish and sprinkle the raisins.  Now pour the custard over the bread slowly so the bread absorbs the custard better. Press the bread with a spoon so that the bread absorbs all liquid. Let it sit for 5 minutes. Now sprinkle sliced almonds and a tbsp of sugar over the top of the bread.
  • Now place the baking dish into the preheated oven for 45-50 mins or until golden and crispy on top. Remove this and let it stand for 5 mins. Serve warm with ice cream or cream and powdered sugar.

Notes

  • You can use plain white bread for making bread pudding. But for real rich taste use some kind of enriched bread like challah or brioche bread.
  • Fresh bread doesn’t work, you have to use day old bread which absorbs the custard better.
  • You can top the bread pudding with any nuts of choice. 
  • fruits like apples, banana and berries can be added in the bread pudding. 
Meal Prep - you can assemble the bread pudding the day before. Cover it tightly with foil and place it into the fridge. You can bake it in oven when you are about to serve.
Add ons - you can add chopped fruits like banana, berries or apples in your bread pudding for extra taste. Chopped nuts, pumpkin seeds adds crunch to the pudding.
Serving - bread pudding taste best when served with vanilla custard, ice cream, whipped cream or caramel sauce.
