This Grilled Vegetable Masala Sandwich is a simple and tasty sandwich made with everyday vegetables cooked in basic Indian spices. The veggies are chopped small, sautéed until soft, and mixed with a bit of tomato ketchup and lemon juice to balance the flavors. Once the filling is ready, it’s layered between slices of bread and grilled until crispy on the outside. Heat oil in a kadai. Add fennel and saute for 30 seconds. Add in onions, green chilli and saute for a min. Sprinkle in cabbage, beans, carrots and salt. Saute till it is cooked. Now add in capsicum and mix well.
Add in all masala powder and give a toss. Now add in ketchup and mix well. Add in coriander leaves and lemon juice and mix. Filling done.
Take three bread slices, spread this between each slice and cover with other. Place this in a oiled grill pan and drizzle some oil over top. Cover and cook till it is crisp and golden. Cut into triangles and serve.
