Kavuni rice porridge or kanji is made with karuppu kavuni rice also known as black rice, forbidden rice or emperor rice. It is high amount of protein, iron and fibre compared to other forms of rice. Traditionally it is used to make Chettinad kavuni arisi sweet, but this porridge or kanji is a delicious way of consuming it more often. Soak karuppu kavuni rice for at least 2 hours or overnight. Now strain the rice in a sieve, take it in a blender and crush them coarse.
Now take the coarsely ground rice in a pressure cooker. Cover with water. Add pearl onion, garlic, green chillies, curry leaves, fenugreek seeds, cumin seeds and black pepper. Bring this to a full boil. Cover and pressure cook for 4 to 5 whistle. Now take it off the heat and let the pressure release by itself. Open the cooker and gently mix the porridge.
Now add in more water if needed. Add coconut milk, salt and mix well. Serve hot.

Instant Pot Kavuni Rice Porridge
Soaking & Grinding - Soak karuppu kavuni rice for at least 2 hours or overnight. Now strain the rice in a sieve, take it in a blender and crush them coarse.Instant Pot Cooking Method - Now take the coarsely ground rice in the instant pot inner bowl. Cover with water. Add pearl onion, garlic, green chillies, curry leaves, fenugreek seeds, cumin seeds and black pepper. Bring this to a full boil. Cover the instant pot. Set this to pressure cook mode, set for 12 minutes of pressure cooking. Once the pressure cooking is done, let the pressure release naturally.Finishing Porridge - Open the instant pot once cooked and gently mix the porridge. Now add in more water if needed. Add coconut milk, salt and mix well. Serve hot.
Expert Tips
It is important to soak the kavuni rice for at least 2 hours prior cooking. It is better if you can soak overnight.
Don’t over grind the rice to a paste, it has to be ground in pulse mode few times. The consistency should be of broken rice texture.
Kavuni rice has a glutinous texture, so a little rice goes a long way mainly in this porridge.
You can use regular milk instead of coconut milk. Or you can have this with just water.
You can skip onions in this recipe, if you don’t prefer it.
Storage & Serving
Leftover cooked porridge can be stored in fridge upto 2 to 3 days. Reheat on stove top with extra water or coconut milk to adjust the consistency.You can enjoy kavuni rice porridge with pickle, chammanthi or any curries.
