I am have been using kavuni arisi a lot lately. This is the one porridge which I make at least once a week now, because it is easy to make and everyone in the family loves it. Usually I make ulundu kanji once a week, but now this is the porridge which I am making. Even my kids are enjoying this porridge.

Since kavuni arisi takes so long to cook, I soak them in water over night and cook. If I forgot to soak the rice the day before, I soak them for 1 to 2 hours, take them in a blender and crush them slightly. I cook them in pressure cooker so it cooks faster. This is the most easy way to cook kavuni arisi.
About Kavuni Rice Porridge
Kavuni rice porridge also known as black rice porridge is made with karuppu kavuni rice. Usually we make Chettinad kavuni arisi sweet using this black rice. Ever since I started cooking kanji using it, I am loving it a lot more. The porridge is not only easy to make but has a unique and distinctive taste to it due to kavuni rice. The porridge has lots of pearl onions, garlic added which makes it aromatic.
Kavuni rice porridge is made with black rice, pearl onion, garlic, curry leaves, green chillies, cumin seeds, black pepper and fenugreek. I also added some coconut milk in the end which made it super delicious. Sometimes I add coconut milk in the end, but you can skip this step entirely. You can add milk instead of coconut milk too. There are so many version of this porridge which you can make.
Karuppu kavuni rice takes so long to cook. So it is best to soak them overnight or at least 2 to 3 hours prior to cooking. Even if you forget to soak, you can crush the rice slightly in a blender and cook in a pressure cooker. This is the fastest way of making kavuni arisi porridge.

What is Karuppu Kavuni Rice?
Kavuni arisi or karuppu kavuni rice also known as black rice, forbidden rice or emperor rice. It is high amount of protein, iron and fibre compared to other forms of rice. It is also known as Black glutinous rice in many parts of the world.
Karuppu Kavuni Rice, or Black Rice, is a traditional heirloom rice variety originated in South India. Its has a distinct dark color which is also purple in shade. This rice is a nutrients packed Powerhouse. It is rich in antioxidants, reduce inflammation, improves heart health, helps in healthy weight management.
Traditionally kavuni rice is used in making sweets, breakfast dishes, porridge. The rice can be cooked and tossed in salads too.
Karuppu Kavuni Rice Porridge Ingredients
Karuppu Kavuni Rice - Kavuni arisi or karuppu kavuni rice also known as black rice, forbidden rice or emperor rice. It has a distinctive purple tint to it, that’s how you can identify the rice. Karuppu kavuni rice takes so long to cook. So it is best to soak them overnight or at least 2 to 3 hours prior to cooking. Even if you forget to soak, you can crush the rice slightly in a blender and cook in a pressure cooker.
Pearl Onions - I used peeled whole pearl onions in this recipe. You can chop them roughly and add it to the kanji.
Garlic - I add lots of garlic cloves in my porridges. Peel garlic cloves and leave them whole.
Flavourings - curry leaves, green chillies adds a wonderful aroma and taste.
Whole Spices - I used fenugreek seeds, cumin seeds and whole black pepper in the porridge.
Coconut Milk - Once the porridge is cooked, I add coconut milk for a sweet taste. Instead of coconut milk, you can use regular milk too.

Kavuni Rice Porridge in 3 Easy steps
Soaking & Grinding - Soak karuppu kavuni rice for at least 2 hours or overnight. Now strain the rice in a sieve, take it in a blender and crush them coarse.
Cooking Porridge - Now take the coarsely ground rice in a pressure cooker. Cover with water. Add pearl onion, garlic, green chillies, curry leaves, fenugreek seeds, cumin seeds and black pepper. Bring this to a full boil. Cover and pressure cook for 4 to 5 whistle. Now take it off the heat and let the pressure release by itself. Open the cooker and gently mix the porridge.
Serving - Now add in more water if needed. Add coconut milk, salt and mix well. Serve hot.
How to Make Kavuni Rice Porridge (Stepwise Pictures)
Soaking Black Rice
1)Karuppu kavuni rice takes so long to cook. So it is best to soak them overnight or at least 2 to 3 hours prior to cooking.
Pro Tip: You can even soak them in hot water for 30 minutes before cooking, for faster soaking.
2)When soaking kavuni rice, you will see a tint of purple shade in the water. This is the distinctive colour of the rice.
Grinding Rice
3)Don’t over grind the rice to a paste, it has to be ground in pulse mode few times. The consistency should be of broken rice texture.
4)This is the texture of rice you are looking for.
Pressure Cooking Rice
5)Take the broken rice in a pressure cooker.
6)Cover them with water. For 1 cup of rice, I use 5 cups of water.
7)Add in peeled whole garlic cloves.
8)Add in peeled whole onions.
9)Add in green chillies and curry leaves.
10)Now lets add in the whole spices. Add in black pepper.
11)Add fenugreek seeds.
12)Add in cumin seeds. Once all the ingredients are added into the pressure cooker. mix it well.
13)Cover and pressure cook for 4 to 5 whistle. Now take it off the heat and let the pressure release by itself. Open the cooker and gently mix the porridge.
Finishing Kavuni Porridge
14)Add in salt to the cooked porridge.
15)You can add some hot water into the porridge.
16)Add in coconut milk into the porridge and mix well.
17)Serve kavuni porridge hot with pickle or chutney.
18)Enjoy.
Instant Pot Kavuni Rice Porridge
Soaking & Grinding - Soak karuppu kavuni rice for at least 2 hours or overnight. Now strain the rice in a sieve, take it in a blender and crush them coarse.
Instant Pot Cooking Method - Now take the coarsely ground rice in the instant pot inner bowl. Cover with water. Add pearl onion, garlic, green chillies, curry leaves, fenugreek seeds, cumin seeds and black pepper. Bring this to a full boil. Cover the instant pot. Set this to pressure cook mode, set for 12 minutes of pressure cooking. Once the pressure cooking is done, let the pressure release naturally.
Finishing Porridge - Open the instant pot once cooked and gently mix the porridge. Now add in more water if needed. Add coconut milk, salt and mix well. Serve hot.
Expert Tips
- It is important to soak the kavuni rice for at least 2 hours prior cooking. It is better if you can soak overnight.
- Don’t over grind the rice to a paste, it has to be ground in pulse mode few times. The consistency should be of broken rice texture.
- Kavuni rice has a glutinous texture, so a little rice goes a long way mainly in this porridge.
- You can use regular milk instead of coconut milk. Or you can have this with just water.
- You can skip onions in this recipe, if you don’t prefer it.
Storage & Serving
Leftover cooked porridge can be stored in fridge upto 2 to 3 days. Reheat on stove top with extra water or coconut milk to adjust the consistency.
