Masala Dosa is a popular South Indian breakfast dish. It is thin crepes made with rice and urad dal filled with a spicy potato masala filling. Potato Masala Dosa taste amazing with some coconut chutney and sambar.
Heat oil in a pan, add in mustard, urad dal, asafoetida and curry leaves. Let them sizzle for a minute. Add in ginger and green chillies and saute for 30 seconds.
Add in onions, carrots and mix well for couple of minutes. Add in turmeric powder and salt and mix well.
Pour in water and mix well. Cover and cook covered for 2 minutes.
Add in mashed potatoes and mix well. Let it heat through for couple of minutes. Add in coriander leaves and mix well. Potato Masala done.
Now to make dosa, spread ½ cup of dosa batter thinly on a cast iron pan, drizzle oil all around the dosa and cook covered on medium heat till it gets golden brown. Spoon potato filling in the center and fold from both sides. Serve hot.
