Who could resist dosa for breakfast, specially when it is filled with spicy potato masala. This Masala dosa is a family favorite.
Idli Dosa are a staple of South Indian meal. They are a lifesaver when you have no time to make anything. Usually it is served with chutney or sambar. But this dosa is special, they have a spicy potato masala inside them. It can be had on its own, you don't need any side dish with them.
About Masala Dosa Recipe
Masala dosa is one of famous South Indian breakfast dish which is originated from Thuluva Udupi or Mangalorean cuisine of Karnataka. The masala dosa is cooked till crispy golden and filled with cooked potatoes, onions and spices.
This dish is a staple in every South Indian home. Every household makes it with their own twist but this version of mine is perfect. Another variation of this masala dosa is this Mysore Masala Dosa.
Potato masala is stuffed inside the crispy dosa. You can make the potato masala as per your taste. The masala used in the dosa is slightly different from the poori masala. it is much thicker with less moisture so it doesn't make the dosa soggy.

I always have few containers of homemade idli dosa batter in the fridge for busy morning. The potato masala used for the filling can be made in bulk and stored in fridge for atleast a week.
You can use the same potato masala for aloo bonda as well. Just roll the filling into small ball, dip in gram flour batter and fry till golden. Enjoy with coconut chutney and masala chai. And another quick breakfast you can make using the filling is this bombay masala sandwich.

Ingredients
- Dosa batter - I used my homemade idli dosa batter for making the masala dosa. It gives crispy and soft dosa.
- Oil - I use regular groundnut oil for making the potato masala. ghee or gingelly oil is used to cook dosa.
- Tempering Spices - I used mustard seeds, urad dal, curry leaves and asafoetida for tempering.
- Onions - I used finely chopped onions for making the potato masala.
- Green chillies - since the recipe doesn't have chilli powder, use required amount of green chillies to the spice you want.
- Ginger - make sure to either grate or finely chop ginger for flavour.
- Carrot - finely chopped carrot is added for colour. You can use green peas as well.
- Potatoes - boil, peel and mash potatoes roughly and add into the potato filling.

Step by Step Pictures
1)Heat oil in a pan. Add in mustard seeds, urad dal, asafoetida and curry leaves. Let them sizzle in the oil for a minute.

2)Add in finely chopped ginger and green chillies. Stir fry this for 30 seconds until ginger fries a little.

3)Add in finely chopped onions and carrots into the oil and cook that for couple of minutes.

4)Add in salt and turmeric powder and mix into the onions.

5)Now pour in ¼ cup of water and mix well. This is to cook the carrots.

6)Cover and cook on low medium heat for 2 to 3 minutes until the carrots is cooked.

7)Now add in boiled and mashed potatoes and mix well.

8)Cook this for few minutes, allow the potatoes to heat through.

9)Add in coriander leaves and mix well. This is your potato filling.

10)Now lets make the dosa. Heat a cast iron dosa tawa on medium high heat. Pour a ladleful of batter and swirl to make thin dosa. Drizzle oil or ghee around the sides.

11)Cover and cook on medium high heat till golden brown.

12)This is the colour you are looking for, the top of the dosa is cooked and the bottom is golden brown in colour.

13)Spoon some of the potato filling in the middle of the dosa.

14)Spoon from both sides.

15)Serve with coconut chutney and red chutney.

16)Enjoy hot.

Ingredients
- 4 cups Dosa Batter
- 8 tablespoon Gingelly Oil or Ghee for cooking Dosa
For Tempering
- 1 tablespoon Groundnut Oil
- 1 teaspoon Mustard Seeds
- 1 teaspoon Split Urad dal
- ¼ teaspoon Asafoetida (Hing)
- 2 sprig Curry leaves
For Potato masala
- 3 no Green Chillies chopped finely
- 2 teaspoon Ginger peeled and chopped finely
- 1 large Onions peeled and chopped finely
- 1 medium Carrot peeled and chopped finely
- 1 teaspoon Turmeric Powder
- 1 teaspoon Salt or to taste
- 3 large Potatoes boiled, peeled and mashed
- ¼ cup Water
- 2 tablespoon Coriander leaves chopped finely
Instructions
- Heat oil in a pan, add in mustard, urad dal, asafoetida and curry leaves. Let them sizzle for a minute. Add in ginger and green chillies and saute for 30 seconds.
- Add in onions, carrots and mix well for couple of minutes. Add in turmeric powder and salt and mix well.
- Pour in water and mix well. Cover and cook covered for 2 minutes.
- Add in mashed potatoes and mix well. Let it heat through for couple of minutes. Add in coriander leaves and mix well. Potato Masala done.
- Now to make dosa, spread ½ cup of dosa batter thinly on a cast iron pan, drizzle oil all around the dosa and cook covered on medium heat till it gets golden brown. Spoon potato filling in the center and fold from both sides. Serve hot.

@Anonymous Asafoetida is a pungent spice. It has a very strong flavour so you only use little. it is also called as hing in hindi. It is available in all indian supermarket
