    I always ask my husband how the hotel coconut chutney looks so white and taste so delicious. It was my long term search to make hotel style coconut chutney at home. Few days back hubby came home with a recipe from his friend who is in hotel industry. He gave me few tips.

    1)Try to use young tender coconut. Not so tender. it should be little young coconut.

    2)Grate coconut till the white part alone. Dont scrape it too much so the coconut gets the brown parts.

    3)Dont add anything except green chillies. That too very less green chillies.

    4)Make seasoning using coconut oil and very less spices.

    Thats it.

    I made the coconut chutney and it turned out super white and super delicious.

    Ingredients
      

    • Freshly grated coconut - 1 cup
    • Green chilli - 1
    • Salt to taste
    • Water as needed
    • Coconut Oil - 1 tsp
    • Mustard Seeds - 1 tsp
    • Urad dal - 1 tsp
    • Curry leaves a sprig

    Instructions
     

    • Take coconut, chilli and salt in a blender. Add water and puree till smooth.
    • Transfer to a bowl.
    • Heat oil, add mustard, urad dal and curry leaves. Let it sizzle.
    • Pour over chutney.
    • Mix well
    • Serve.

      I tried this after posting this white coconut recipe, very tasty , good looking , enjoyed with soft idle with butter , TQ for posting this recipe.
