Peanut Rice Recipe also known as groundnut rice or verkadalai sadam is a simple rice dish which is great to pack in lunch box. A spiced peanut powder is made with peanuts, chillies, whole spices and coconut tossed with cooked rice to make this delicious peanut rice.
Roasting peanuts - Now heat a pan on medium heat. Add in peanuts and roast it for 5 mins on a dry pan. Now add in dry red chilli and roast it for couple of mins. Now add in sesame seeds and roast it for a min. Now add in coconut and roast it for 3 mins till it turns light golden.
Peanut Rice Powder - Remove this whole thing on a plate and allow it to cool down. Take this in a blender and Grind this to a coarse mixture.
Tempering - Heat oil in a kadai and add all the tempering ingredients. Saute for a min.
Peanut Rice - Now add in rice and mix well. Season with salt and mix well. Now add the powdered peanuts and toss well. Serve hot.
