Peanut Rice Recipe also known as groundnut rice or verkadalai sadam is a simple rice dish which is great to pack in lunch box. A spiced peanut powder is made with peanuts, chillies, whole spices and coconut tossed with cooked rice to make this delicious peanut rice.

Ingredients
  

  • 2 cups Cooked Rice
  • 1 teaspoon Salt

For Peanut Powder

  • 4 tablespoon Raw Peanuts
  • 4 no Dry Red Chillies
  • 1 tablespoon Sesame Seeds
  • 3 tablespoon Coconut grated

For Tempering

  • 2 tablespoon Sesame Oil
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Split White Urad dal
  • 1 teaspoon Split yellow Channa Dal
  • ¼ teaspoon Asafoetida
  • 1 sprig Curry leaves

Instructions
 

  • Roasting peanuts - Now heat a pan on medium heat. Add in peanuts and roast it for 5 mins on a dry pan. Now add in dry red chilli and roast it for couple of mins. Now add in sesame seeds and roast it for a min. Now add in coconut and roast it for 3 mins till it turns light golden.
  • Peanut Rice Powder - Remove this whole thing on a plate and allow it to cool down. Take this in a blender and Grind this to a coarse mixture.
  • Tempering - Heat oil in a kadai and add all the tempering ingredients. Saute for a min.
  • Peanut Rice - Now add in rice and mix well. Season with salt and mix well. Now add the powdered peanuts and toss well. Serve hot.
