    Peanut Rice / Verkadalai Sadam - Lunch Box Ideas

    One fineday i was in a crazy mood to try different rice recipes. So i started to work on it and i made quite a few recipes. I made sesame rice, gooseberry rice, curryleaf rice..All of them turned out so good and we enjoyed it to the core. This has become one of my favorite among them, it was spicy and nutty. If you have leftover rice, then this is a awesome recipe to give it a try. 

    You can even make the peanut powder in advance and store in fridge for a couple of weeks. It won't go bad. By this way your work is half reduced. You can just mix this with rice and do a little tempering and your work is done.

    Preparation Time : 5 mins
    Cooking Time : 10 mins
    Serves - 2 to 3


    Ingredients:

    Rice - 1 cup
    Salt to taste

    For Peanut Powder:
    Peanuts - 3 tblspn
    Dry Red Chilli - 2 to 3
    Sesame Seeds / Yellu - 1 tblspn
    Coconut - 2 tblspn grated

    For Tempering:
    Oil - 1 tblspn
    Mustard Seeds / Kaduku - 1 tsp
    Urad dal / Ulundu Paruppu - 1 tsp
    Channa Dal / Kadala Paruppu - 1 tsp
    Curry leaves - 1 spring


    Method:

    Take 1 cup rice in a pressure cooker, cover with 2.5 cup of water and pressure cook rice for 2 whistle and simmer for 5 mins. Switch off the flame and let the steam go all by itself. Now fluff the rice with fork and allow it to cool down.

    Now heat a pan on medium heat. Add in peanuts and roast it for 5 mins on a dry pan. Now add in dry red chilli and roast it for couple of mins. Now add in sesame seeds and roast it for a min. Now add in coconut and roast it for 3 mins till it turns light golden.

    Remove this whole thing on a plate and allow it to cool down. Take this in a blender and Grind this to a coarse mixture.

    Heat oil in a kadai and add all the tempering ingredients. Saute for a min.

    Now add in rice and mix well. Season with salt and mix well.

    Now add the powdered peanuts and toss well.

    Serve hot.

    Toss well

    Season with salt

    Add in peanut powder

    Give a good mix
    Pin
    Let everything warm up
    Pin
    Serve

      Tried this recipe...its a yummm and very different ..i was a little sceptical at first as to how it would taste...but im glad i tried it....what do u suggest as an accompaniment with this? Have tried many of your other recipes too..hats off!!!
