Equipment

Ingredients
  

For Base (Biscuit Crust)

  • 200 grams Digestive Biscuits
  • 100 grams Butter melted

Cheesecake Filling

For Strawberry Topping

  • 2 cups Strawberries chopped finely
  • ¼ cup Sugar
  • 2 teaspoon Lemon Juice

Instructions
 

  • Start with biscuit base, Take biscuits in a bowl, crush biscuits slightly. I like texture in my crust, so I use a rolling pin and crush the biscuits in a bowl. Add melted butter to the crushed biscuit and combine well. Take a removable base cake pan, add the biscuit into the pan. Spread evenly using a spatula. Now press firmly to line the base. Once the base is lined place the pan in fridge or freezer to set for at least 30 minutes.
  • To make cheesecake filling, it is super easy. Take cream cheese, cream, powdered sugar, vanilla, salt, lemon juice in a bowl and use an electric beater to combine this for just 40 seconds to 1 minute. If you don't have an electric beater you can mix this with whisk. Take the cake pan from freezer. Spoon this cheesecake filling over the crust, spread evenly and place in fridge to set overnight.
  • Now make the topping. Cook strawberries with sugar and lemon juice till thick and jam like. I used date sugar, you can use any sweetener. If you don't have access to fresh strawberries, you can opt for the easy step of using strawberry jam or preserve. Once it is spread, place the cheesecake in fridge until ready to serve.
  • Slice and serve.
