    No Bake Eggless Strawberry Cheese Cake to Celebrate NEW YEAR 2013

    2012 is very special to me, because i had my life memorable day on that year, Yes my wedding day. I got married to my high school sweetheart after 7 years of struggle. Right now we are happily married for 8 months. 


    So many sweet things happened to me in the past year, my wedding, started baking business which took my passion to the next level, Got my own SLR Camera from Hubby, my first winning experience  and it goes like that...I even had few frustrating part on 2012..I hope everyone had their own happy and sad time in this year, letz forget the sad and keep the happiest moment on our heart and kick start 2013

    So to celebrate 2013, I am delivering you guys a bright yet yummy cheesecake which has strawberries in it( in jam form). Let your life be colourful and bright like this cheesecake throughout the year..

    Preparation Time : 15 mins
    Chilling Time : 5 hours maximum or overnight
    Serves - 8 to 9
    Makes one 15 cm cheesecake


    Ingredients:

    Marie Biscuits / Any Tea Biscuits - 200 gms / 20 pieces
    Butter - 100 gms melted
    Paneer / Cottage Cheese - 200 gms (Click here for recipe)
    Whipping Cream - 300 ml ( I used powder form)
    Icing Sugar / Confectioners Sugar - 200 gms / 1 cup
    Lemon Juice - 2 tsp
    Vanilla Essence - 2 tsp
    Strawberry Jam - 1 cup or as needed
    Milk - few tblspn if needed


    Method:

    Take biscuits in a bowl and crush them with your hands or any machine till they are crumbled.

    Add in some melted butter and mix well.

    Take a 15 cm round spring form pan. Tranfer the biscuit crumble in the base of this and Press it firmly so it create the base of the cheesecake. Put this in the fridge till you finish making the filling.

    Take paneer, icing sugar, vanilla, lemon juice in a blender and make into a fine puree. Add some milk if you feel like you need some.

    Now take whipping cream in a bowl and beat using a electric beater till they are whipped and firm.

    Add the paneer mixture on to the whipped cream and mix well.

    Pour the cream mixture over the biscuit base and put back in the fridge for 4 hours or overnight.

    Now take some strawberry jam in a microwave safe bowl and warm it slightly if it is too hard.

    Pour this jam over the cheesecake and put back in the fridge for a hour.

    Slice and Serve.

    grind them till they are smooth

    transfer to a bowl

    Take whipping cream powder in a bowl

    add some ice cold water
    Pin
    and start beating
    Pin
    till they are whipped and stiff

    add the paneer mixture into the cream

    and mix well

    transfer that over the biscuit base

    let them set in the fridge overnight

    Now take some strawberry jam and warm them up
    Pin
    take the cheesecake out of the fridge

    spread the jam evenly

    unmould 
    Pin
    Serve

        That looks so good...i have a couple of questions: i don't get here whipping cream or its powder, i get only cream, how do i make whipped cream at home?
        i get lot of fresh strawberries here, how can i make a simple jam out of it? Or can i just put fresh strawberries on top of cake?

      @aarthiSorry u cannot make whipping cream at home, even if you make you cannot whip it like store bought. You can get whipping cream powder in online stores. And i will share jam recipe soon, yes u can put fresh strawberry on top to. But make sure you cut it and sprinkle sugar over it. This way it will be sweet and saucy

I am going to try this cake for this weekend. 1 quick doubt what is the difference between these two types. You had used gelatin for mango cake and lemon here.

      After the final step where should we place the cake pan ,in freezer or normal compartment of fridge. My cake tasted very nice but had ice crystals in between.what mistake could i have made.
