Ingredients
  

  • Oil for Deep Frying

For Diamond Cuts Dough

  • 1 cup All Purpose Flour / Maida
  • ½ teaspoon Salt
  • 1 tablespoon Ghee or Butter
  • Water as needed

For Making Sugar Syrup

  • ½ cup Sugar
  • ¼ cup Water

Instructions
 

  • Take flour, salt, ghee in a bowl and rub with your fingers till it resembles a coarse crumb. Add water slowly and knead to a dough. Let it rest for 30 mins or so.
  • Now take a small portion of dough and roll it little thin. Now cut it into small diamond shape.
  • Heat oil for deep frying, drop the diamond in hot oil and fry till golden. Drain and set aside.
  • Now make the syrup. Heat sugar and water in a pan, mix well till sugar is melted, now boil it and cook till two string consistency. It will be thick.
  • Now add the fried diamond cuts in this and coat it well. As it cools the sugar will harden. Cool this completely and store it in a air tight container. This stays good for 2 weeks..

Notes

  • You can use wheat flour instead of refined flour. For even better texture, use half wheat flour and half refined flour.
  • Using ghee, butter in flour when kneading the dough gives crispy flavour and texture when frying.
  • If you don’t bother making sugar syrup, you can just add few spoons of icing sugar or powdered sugar to the fried diamond cuts.
  • You can flavour the sugar syrup with some cardamom.
    Chopped fried nuts like cashews, almonds can be added to the sweet diamond cuts.

Storage and Serving

Sweet diamond cuts can be stored in an air tight container for 2 to 3 days. Enjoy sweet diamond cuts with a cup of green tea or black coffee.
