Ube Milk Tea Recipe (Ube Bubble Tea)

Ube Milk Tea also known as Ube Bubble Tea or Purple Sweet Potato Milk tea is a delicious refreshing drink made with powdered ube, coconut milk, sugar and sweetened condensed milk. You can add cooked boba pearls and make it ube bubble tea. Learn how to make the vibrant ube milk tea with step by step pictures and video.

Ingredients
  

For Ube Base

  • 4 tablespoon Purple Yam powder (Ube)
  • 1 cup Coconut Milk
  • ¾ cup Sugar

For Cooking Boba

  • 1 cup Boba Pearls
  • 1 litre Water

For Ube Bubble Tea

Instructions
 

  • Take coconut milk, sugar and yam powder in a sauce pan. Cook till it thickens up. Keep mixing so no lumps are formed. Set aside in fridge till cold. This is the base.
  • Take water in a sauce pan. Bring it to a boil. Add in boba pearls and cook till it is cooked. It will take around 10 mins. Strain and rinse in cold water. Set aside.
  • Take milk, sweetened condensed milk, purple yam base and blend till creamy.
  • Take serving glass, smear some of the purple yam base on the sides of the cup. Add in boba pearls as much as you like. Pour in the yam milk and serve immediately.

Notes

  • I used purple sweet potato powder | Ube powder which I found in amazon. It gives natural purple colour to many desserts.
  • You can find boba pearls in amazon.
  • Fill the serving cup with ice cubes if needed.
  • You can increase the sweetness level by increasing the sweetened condensed milk.
  • You can add sugar instead of sweetened condensed milk.
  • If you can find fresh purple sweet potato powder then use that.

Storage

You can make the ube base in advance and store in fridge for upto 3 to 4 days.
