    Ube Milk Tea also known as Ube Bubble Tea or Purple Sweet Potato Milk tea is a delicious refreshing drink made with powdered ube, coconut milk, sugar and sweetened condensed milk. You can add cooked boba pearls and make it ube bubble tea. Learn how to make the vibrant ube milk tea with step by step pictures and video.

    I love bubble tea. They are not only easy to make but taste so good. My kids love boba drink too. So I usually buy a large packet of boba from amazon and store in fridge. I have made quite a few boba recipes on my blog before.

    This recipe i have been eyeing on for a while now. I had purple sweet potato powder on hand so I wanted to use that to make this boba drink. Specially for this colour.

    About Ube Milk Tea

    If you are a fan of ube milk tea and boba bubble tea then this drink is a treat for you. Because it has both ube and boba in them. I love this drink more for its colour, its vibrant colour looks amazing and also I enjoy the ube flavour.

    Coconut milk along with be taste super delicious and itis definitely a treat.

    Ube Milk Tea (Bubble Tea) Ingredients

    Ube Powder - If you can get your hands on cooked fresh ube then that is the way to go. But you can find dried ube powder easily these days, so you can use those.

    Coconut Milk - coconut milk is added to ube powder and it is cooked to a paste which can be stored in fridge or even kept frozen, so you can use them whenever you want.

    Sugar - add as much sugar as you need. The sweetness totally depends on your taste. You can even use honey or maple syrup instead of sugar.

    Milk - use cold milk for best taste.

    Condensed Milk - even though this is optional, condensed milk adds extra creamy milky taste to the beverage.

    How to Make Ube Bubble Tea at Home

    Making Ube Paste - Take coconut milk, sugar and yam powder in a sauce pan. Cook till it thickens up. Keep mixing so no lumps are formed. Set aside in fridge till cold. This is the base.

    Cooking Boba - Take water in a sauce pan. Bring it to a boil. Add in boba pearls and cook till it is cooked. It will take around 10 mins. Drain and rinse in cold water. Set aside.

    Making Ube Milk Tea - Take milk, sweetened condensed milk, little of the purple yam base and blend till creamy.

    Serving - Take serving glass, smear some of the purple yam base on the sides of the cup. Add in boba pearls as much as you like. Pour in the yam milk and serve immediately.

    How to Make Ube Milk Tea (Stepwise Pictures)

    1)Take coconut milk in a sauce pan.

    2)Add in sugar

    3)Mix well

    4)Add in purple yam powder.

    5)Use a whisk to mix till combined.

    6)Whisk till combined.

    7)Heat till it comes to a boil. Keep whisking  till it thickens.

    8)Now it has thickened.

    7)Remove it from heat and set aside to cool completely.

    8)Now the paste has turned thick. it is completely cold.

    9)Bring water to a boil for cooking boba.

    10)Add in boba pearls.

    11)Cook till boba is completely cooked.

    12)Drain it. Rinse in cold water.

    13)Lets make the bubble tea. Take some of the purple yam base in a blender

    14)Add in cold milk.

    15)Add in sweetened condensed milk to taste.

    16)Time to blend

    17)Now it is well blended.

    18)Take serving glass.

    19)Drizzle little purple yam paste around the edges of the glass.

    20)Add in cooked boba pearls.

    21)Pour the milk in. 

    22)Serve cold.

    Expert Tips

    1. I used purple sweet potato powder | Ube powder which I found in amazon. It gives natural purple colour to many desserts.
    2. You can find boba pearls in amazon.
    3. Fill the serving cup with ice cubes if needed.
    4. You can increase the sweetness level by increasing the sweetened condensed milk.
    5. You can add sugar instead of sweetened condensed milk.
    6. If you can find fresh purple sweet potato powder then use that.

    Storage

    You can make the ube base in advance and store in fridge for upto 3 to 4 days.

    Ingredients

    For Ube Base

    • 4 tbsp Purple Yam powder (Ube)
    • 1 cup Coconut Milk
    • ¾ cup Sugar

    For Cooking Boba

    • 1 cup Boba Pearls
    • 1 litre Water

    For Ube Bubble Tea

    • 4 cups Milk
    • 4 tbsp Sweetened Condensed Milk

    Instructions
