    Zucchini Kootu Recipe

    Zucchini Kootu Recipe is a South Indian inspired dish made with moong dal, zucchini, spiced coconut masala simmered together to make delicious curry. You can enjoy this kootu hot with rice or roti.

    Zucchini kootu

    Kootu is a dish which is a staple in our home. Amma makes it with variety of vegetables including cucumber, mixed veggies, papaya, snake gourd. This is my recent discovery and making kootu with zucchini taste so delicious with some rice or roti. This is healthy and tasty dish which is so easy to make.

    About Zucchini Kootu

    Kootu is made with moong dal, zucchini, coconut masala which is cooked until it is thickens like a curry. This taste amazing with sambar, puli kuzhambu or even served with roti. You can check my zucchini dal.

    Zucchini is a healthy vegetable which can be a struggle to include in everyday diet. This kootu is a simple recipe to follow and can be served with rice. All you need is to cook moong dal, zucchini together. Mix it with coconut paste and give a final tempering. The whole dish comes together in less than 30 minutes.

    Ingredients

    Zucchini  - use fresh zucchini for making this dal so it cooks faster and taste so delicious.

    Coconut - You can use fresh coconut which is ground into a paste and used to thicken the curry.

    Moong Dal - I like to use moong dal for this recipe, you can use toor dal or masoor dal too.

    Spices - I used chillies and cumin seeds to grind with the coconut.

    Step by Step Pictures

    1)Lets make the masala for the kootu. Take coconut in a blender.

    2)Add in dry red chillied and cumin seeds.

    3)Grind to a coarse mix. You can add water to grind or make coarse mix.

    4)Chop fresh zucchini into small pieces.

    5)Wash and take moong dal in a sauce pan. Cover with water.

    6)Bring this mix to a full boil, reduce the flame. Cover with lid and cook on low until the dal is cooked.

    7)Now dal is cooked and soft.

    8)Add in zucchini and mix well. You can saute the zucchini in oil separately before adding into the dal.

    9)Add in turmeric powder.

    10)Mix well.

    11)Cook till veggie is done.

    12)Add in coconut masala which we ground earlier.

    13)Mix well

    14)Add salt

    15)Mix well

    16) Heat coconut oil in a pan. Add tempering ingredients including vadam and fry until golden.

    17)Pour this into the kootu and mix well.

    18)Zucchini kootu is ready.

    19)Serve.

    Equipment

    Cooking pot

    Ingredients
      

    • 1 large Zucchini chopped
    • ¼ cup Yellow Moong Dal | Pasi Paruppu
    • 1 teaspoon Turmeric Powder
    • Salt to taste

    To Grind

    • ½ cup Fresh Coconut grated
    • 1 teaspoon Cumin Seeds
    • 2 no Dry Red Chillies

    FOR SEASONING:

    • 1 tablespoon Coconut Oil
    • 1 teaspoon Mustard Seeds
    • 1 teaspoon Split Urad Dal
    • 1 no Dry Red Chillies
    • 1 sprig Curry Leaves
    • 3 piece Vadakam (Onion Thalippu vadam)

    Instructions
     

    • Grind the ingredients given to grind to a coarse mix by adding some water. Set aside.
    • Wash and Take dal in a pan. Add water and cook till dal is cooked. Add in zucchini and cook till dal and zucchini is cooked. Now add in turmeric powder and salt and mix well. Simmer for few minutes.
    • Add coconut masala into the kootu and mix well. Simmer for 2 mins. Take it off the heat.
    • For Tempering. Heat oil in a pan, add all ingredients listed and fry until golden. Pour this into the kootu and mix well.
    • Serve hot with rice.
