Chicken Yakhni Pulao Recipe with step wise pictures.

A flavourful chicken pulao which is packed with aroma and is so delicious with some raita and salna. Taste so delicious.

Pulao or biryani comes handy when coming to lunch box recipes. This recipe goes perfect with some raita, i served it with onion raita. You can enjoy with any raita of choice. You will need a handful of ingredients to make this pulao and it comes together in less than 40 mins.

Chicken Yakhni Pulao Recipe

Ingredients

FOR COOKING CHICKEN:

  • Chicken - 1 kg with bones
  • Water - 5 cups
  • Shahi Jeera - 2 tsp
  • Cardamom / Yelakai - 5
  • Cloves / Krambu - 5
  • Bay Leaf - 1
  • Cinnamon / Pattai - 1 stick
  • Star Anise - 1
  • Salt to taste
  • Garam Masala Powder - 2 tsp

FOR BIRYANI:

  • Oil - 1/2 cup
  • Cumin Seeds / Jeerakam - 1/2 tsp
  • Cardamom/ Yelakai - 4
  • Cloves / Krambu - 4
  • Cinnamon / Pattai - 1 stick
  • Mace - 2 piece
  • Kalpassi - 1 piece
  • Onion - 2 large sliced thinly
  • Curd / Yogurt - 1/2 cup
  • Green Chilli - 5 to 6
  • Ginger Garlic paste - 2 tblsp
  • Basmati Rice- 3 cups
  • Chicken Stock - 4.5 cup
  • Salt to taste
  • Kewra Water - 1/2 tsp

Instructions

  • Soak basmati rice for 30 mins.
  • Take chicken and all spices in a large pot. Boil for 20 mins. Strain it and set aside.
  • Heat oil in a pot. Add in whole spices and let them fry.
  • Add in onions and chillies and fry till golden.
  • Add in ginger garlic paste and saute till raw smell leaves.
  • Add in curd and mix well.
  • Add in chicken and toss well.
  • Add in rice and mix well.
  • Add chicken stock and salt. Mix well.
  • Bring it to a boil. Cover and simmer for 15 to 20 mins.
  • Turn off the heat and let it stand for 10 mins.
  • Fork through the rice and serve.

20)Mix well

21)Boil till rice is almost done

22)Cover and simmer the flame.

23)Cook till rice is done

    Add this masala and soaked drained rice to the prepared yakhni ( stock ) in the saucepan, turn on the heat and cook the rice in it uncovered for about 5 minutes or till the water dries up.
