    Crispy Corn Chaat Recipe

    Crunchy Corn Chaat Recipe with Step by Step Pictures. Sweet corn coated with fluor and deep fried till crispy and tossed with onions, tomatoes, chillies, coriander leaves and spices. This crispy corn chaat is delicious on its own as a salad or appetiser.

    I was inspired to make this recipe after i made barbeque nation crispy corn. I was so in love with it which made me create an Indian chaat version. I used chaat masala, cumin powder which made a lip smacking snack. Also Make My Barbeque Nation Crispy Corn.

    About Crispy Corn Chaat

    I have started making this corn chaat very often than anything else. I started loving it too. This corn chaat tasted amazing and is one of the best way to enjoy corn. It makes a perfect snack for any parties too. Kids till love this for sure.

    Just toss some flour into cooked sweetcorn and fry till crispy. Then toss it in chaat masala and some freshly chopped onions, chillies and coriander leaves along with some lemon juice. Thats it. I used just onion and tomatoes, you can use chopped bell peppers too.

    For more crispy texture in the corn, use just cornstarch and rice flour combination for getting even more crispier corn. For Even more crispy texture, Double frying corn may help to get crispier corn. Fry sweetcorn for 1 min on hot oil, drain and then refry again in super hot oil till crispy.

    Ingredients

    • Sweet Corn - I prefer using fresh corn instead of frozen.
    • For Coating - a combination of rice flour, plain flour and cornstarch helps create the crispy coating on the corn.
    • Fresh Ingredients - chopped onions, tomatoes, green chillies, coriander leaves adds a refreshing bite to the corn.
    • Seasonings & Spices - chilli powder, cumin powder, chaat masala, lemon juice, black salt adds the taste.

    Coating Sweet Corn

    1)Take sweetcorn in a bowl. This is frozen sweetcorn, so i just microwaved it for 1 min. Strain the water completely. Take it in a bowl.

    2)Season the corn with salt and black pepper powder. Toss to combine.

    3)Add in the flour mixture, I used cornstarch, all purpose flour and rice flour. This combo makes the corn super crispy once fried.

    4)Toss the corn with this flour mixture. You can shake the bowl gently so the corn coats with the flour.

    5)Now to remove excess flour, take the corn in a sieve. Shake it gently to remove any excess dry flour.

    6)Shake it so the excess flour gets away and the flour is evenly coated on the corn.

    7)Now you can see the corn has a light coating of flour.

    Frying Corn

    8)Heat oil for deep frying. Drop the coated corn in super hot oil.

    9)Once corn is added into the oil, don't try to mix it. If you mix it, the coating may crumble in the oil. Let it fry on high heat for 1 minute or so.

    IMP - Be careful when frying corn, it may burst sometime.

    10)Once 1 minute is up, the bubbles would have subsided. This is the time you have to mix the corn gently.

    11)Let it fry until most of the bubbles is subsided. It should get crispy and golden brown. Mix gently often.

    12)Now the corn looks super crispy and fried. Strain it using a slotted spoon.

    13)Take the fried corn on a paper towel. Remove excess oil from it. Take the corn in a sieve.

    14)Add in onions, tomatoes, chillies and coriander leaves

    15)Add in salt, cumin powder, chaat masala, lemon juice.

    16)I also added some chilli powder because I wanted it spicy.

    17)Toss well and serve.

    Expert Tips

    • You can use fresh or frozen sweetcorn. Frozen is best since it don't need any cooking, just thaw and use in cooking.
    • Toss the corn gently in flour so it coats in a thin layer. Drain the corn well before adding flour so it don't get lumpy. Shake excess flour so the oil dont gets too floury.
    • Fry the corn in very hot oil so it gets very crunchy.
    • You can add vinegar instead of lemon juice.
    • Serve immediately for best taste

    Variations

    1) Indian Style Crispy Corn: Add chilli powder, pepper powder, cumin powder, chaat masala powder, pepper powder and lemon juice.

    2)Chaat Crispy Corn: Add chilli powder, cumin powder, chaat masala powder, black salt and tamarind sweet and sour sauce.

    3)Italian Style Crispy Corn: Add dried basil, oregano or italian seasoning along with some fried garlic, chilli flakes.

    4)Chinese Style Crispy Corn: Add fried garlic and ginger, chopped spring onion, little soy sauce, sugar and vinegar.

    Ingredients
      

    For Frying Corn

    • 2 cups Sweet Corn
    • 2 tablespoon Corn starch
    • 2 tablespoon Plain Flour (All purpose flour)
    • 2 tablespoon Rice Flour
    • 1 teaspoon Salt to taste
    • Sunflower Oil for deep frying

    For Preparing Chaat

    • 1 medium Onion peeled & chopped finely
    • 1 medium Tomato chopped finely
    • 1 no Green Chillies chopped finely
    • 1 teaspoon Red Chilli powder
    • 1 teaspoon Chaat masala powder
    • 1 teaspoon Roasted Cumin powder
    • 1 tablespoon Lemon Juice or to taste
    • 3 tablespoon Coriander Leaves finely chopped

    Instructions
     

    • I used frozen sweetcorn. So i just placed it in microwave and cooked for 1 min. If you are using fresh sweetcorn, then boil in water for 4 to 5 mins. Strain the corn completely. Take the strained corn in a bowl.
    • Add flour, rice flour, cornstarch, salt, pepper into the corn and toss well. Place the corn into a fine mesh sieve and shake so the excess flour is removed.
    • Heat oil for deep frying till super hot. Drop the corn into the oil. Fry till super crispy and golden. Around 3 to 4 mins. Strain it in a sieve.
    • Now onions, tomatoes, chillies, seasoning, lemon juice, coriander leaves and mix well. Serve immediately.
