Grilled Cajun Chicken Recipe

Cajun Seasoning is like a life saver at times. It is packed with tons of flavour and you dont have to worry about any other ingredients if you have this one. I bought a bottle of cajun seasoning during my last trip to chennai. I have made a delicious cajun chicken pasta using that. Then yesterday i thought of making a grilled chicken using that. And it turned out so juicy, i made a stir fried noodles with peas to go along with it.

Preparation Time : 10 mins
Cooking Time : 12 to 15 mins
Marinating Time : 2 to 4 hours
Serves : 2

Ingredients:
Chicken Breast – 2
Oil – 2 tblspn
Lemon Juice or Vinegar – 1 tblspn
Cajun Seasoning : 2 tblspn or to taste (I used storebought)
Shallots – 10 chopped (Use 1 medium size onion)

Cajun Seasoning:
Salt – 1 tsp
Chilli Powder – 1 tblspn
Garlic Powder – 1 tblspn
Pepper Powder – 1 tsp
Onion Powder – 1 tblspn
Oregano – 1 tsp
Thyme – 1 tsp
Method:
Take chicken breast, pat it dry with a paper towel, wrap it in plastic wrap and bash it using a rolling pin till it is in even thickness.
Mix all the ingredients except chicken. 
Add chicken in and leave to marinate for 2 to 4 hours.
Heat a grill pan or normal pan till smoking, place chicken over it and cook for 7 to 8 mins till done, flip over and cook on other side for 5 to 6 mins.
Now remove it and serve.

Pictorial:
You just need a handful of ingredients
First pat dry your chicken using  paper towel
Wrap it in plastic wrap
Use a rolling pin to bash the chicken a little so it get even thickness which cooks evenly

Now lets make the marinate..Take oil in a bowl
add in lemon juice or vinegar
add in cajun seasoning..I used storebought, 
if you want to make your own,
check the written part of the recipe
Mix well
I added few chopped shallots
Now place the chicken in this
coat on all sides and let it marinate for 2 to 4 hours
Heat a grill pan or a normal pan untill it smokes
place the chicken over it
let it cook for 7 to 8 mins
flip over and cook
let it cook till it is done

    Hey Aarthi,

    I made the Cajun Chicken last evening but cut the boneless chicken in smaller pcs. Also marinated Red peppers, mushrooms & potatoes and made a dish of it. Came out yummy – thanks for the lovely receipe. Follow your receipes everyday and tried many.

    Hi Aarthi . You mentioned that the grill pan has to be smoking hot when you first put the chicken breast on it.Do you continue to the cook on high heat for the next 7/8 mins?
