    Homemade chewy candies which are called as jujubes. These gelatin based jujubes are tasty and fruity.

    Jujubes Recipe

    Jujubes was on my to do list for quite some time. Finally i made yesterday and it turned out pretty good. My little one loved it. I used agar agar in this and the jujubes turned out to be more melt in mouth. But if you use gelatin it will be more chewy and gummy.

    This is a delicious and kids friendly recipe.Your kids will love it for sure. You can half the batch for lesser quantity. For vegans and vegetarians you can use agar agar powder in this recipe which will give perfect jujubes.

    Ingredients for Jujubes

    • Sugar
    • Water
    • Liquid Glucose or Corn Syrup
    • Agar Agar Powder or Gelatin
    • Lemon Juice
    • Food Colouring (yellow, red, green)
    • Essence - Raspberry, Strawberry and Pineapple

    I will soon share a fruit snack recipe which is made using fresh fruit juices.

    Jujubes Preparation

    • Take gelatin or china grass in a bowl, add in ½ cup of water and mix well. Set aside for 10 mins.
    • In a heavy bottom pan, take sugar, ½ cup of water, glucose  and mix well. Put it on heat and cook on low heat till the sugar melts. Bring it to a boil.
    • Boil the syrup until it reaches the hard ball stage (125°C) or you can check this by using a clean spoon when the syrup is dropped into cold water it may be formed into a hard ball.
    • Now add in lemon juice and mix well. Boil it well.
    • Now add in gelatin,mix and stir till it is melted.
    • Divide this into three bowls and food colour and essence.
    • Now pour it in greased bowls and let it dry outside overnight.
    • Now cut into small pieces, and roll it in sugar.
    • Store in an air tight container in fridge..

    add some cold water and stir well and let it sit for 5 mins

    grease three plates with little oil and set aside

    squeeze lemon juice and strain it

    take sugar in a heavy bottom pan

    simmer till sugar is melted

    spoon some syrup in a plate with water, it should form a hard ball

    Ingredients
      

    • Sugar - 2 ½ cups / 500 grams
    • Water - ½ cup + ½ cup
    • Liquid Glucose or Corn Syrup -½ cup / 150 grams
    • Agar Agar Powder or Gelatin - 50 grams
    • Lemon Juice - 3 tblspn see notes
    • Food Colouring yellow, red, green
    • Essence - Raspberry Strawberry and Pineapple

    Instructions

    Notes

    1)Instead of lemon juice use citric acid.
    2)Using agar agar will give melt in mouth jujubes. Gelatin will give gummy jujubes
    3)Cook sugar syrup till it reaches hard ball stage, so it gives perfect gummy.

My husband is from nagarcoil and I will like to make some authentic nagarcoil food for him...

      Hi Aarthi,i have tried jujubes,but i got semi-solid one,like top layer was all set and the bottom layer was not good.i used agar agar patches instead of powder.
