Ingredients for Instant Sambar
- Oil - 1 tblspn
- Mustard Seeds / Kaduku - 1 tsp
- Urad Dal / Ulundu Paruppu - 1 tsp
- Onion - 1 medium size sliced
- Tomato - 1 large sliced
- Green Chilli - 1 sliced
- Gram Flour / Besan / Kadalai Mavu - 2 tblspn
- Chilli Powder - 1 tsp
- Coriander Powder - 1 tblspn
- Turmeric Powder - 1 tsp
- Potato - 1 large boiled and peeled
- Water as needed
- Salt to taste
- Sugar - 1 tsp
- Coriander Leaves a handful chopped finely

How to Make Instant Sambar
- Heat oil in a pan, add mustard seeds, urad dal and let it sizzle.
- Add in onions, tomatoes, green chillies and saute for a min.
- Pour in gram flour, chilli powder, turmeric powder and coriander powder. mix well.
- Pour in water, potatoes, salt and sugar and bring it to a boil.
- Add in coriander leaves and mix well.

Adding to my collection of time savers! I keep a big jar of * toasted * (In a saute pan with no oil) gram flour on hand for when I don't want to cook lentils, or just plain don't want them whole in what I'm making. It goes into rasam & sambhar and in other things that need to be thickened. Your recipe tastes different depending on whether it gets toasted or raw gram flour. : - )
