    Mambazha payasam also known as Mampaal is one of the traditional South Indian recipe made on Vaikasi visagam to celebrate Lord Murugan birthday. On the day of Vaikasi visagam, along with mambala kaadi, panchamirtham, sweet pongal and fruits are also offered.

    Every spoon of this mambala kaadi has the balanced flavours of sweet mango, dry ginger powder and cardamom powder. This is one of the recipes that you won't find in any restaurants, it's an authentic homemade recipe made with pure love, divine and tradition.

    This recipe is supposed to be here yesterday or someday before that. Because this is made on vaikasi visakam. Vaikasi visakam is lord murugan birthday. His birth star is visakam. We celebrate that day as his birhtday. We always make this mampaal as the sweet and offer lord murugan.

    About Mambazha Payasam

    Mambala kaadi is made with ripe mangoes, jaggery, cardamom powder, dry ginger powder and rice flour. This is a kind of mango payasam made especially on the day of Vaikasi visagam to celebrate Lord Murugan's birthday. This recipe is so easy to make and it can also be served on other special occasions like Navratri, Onam and Diwali. 

    Mambala kaadi is prepared by cooking the chopped mangoes in jaggery syrup until it becomes soft and then thickened with a rice flour slurry paste. It is finally flavoured with spices like dry ginger powder and cardamom powder. 

    The mango adds the natural sweetness, softness and jaggery enhances the flavour of kaadi and cardamom powder, dry ginger powder gives an aromatic flavour. It is a simple, comforting recipe and made with love for Lord Murugan on his birthday. It tastes so light, natural and also great for evening snack or an after meal quick dessert. Before the mango season ends, once a while give this recipe a try.

    Mambala kaadi is a South Indian traditional and divine recipe made specially for Lord Murugan's birthday. This recipe is kind of similar to mambala payasam, but made without any milk.

    The main flavouring agents of kaadi are dry ginger powder and cardamom powder. These ingredients make the kaadi so special and divine. It is a simple and lip smacking sweet recipe that can be made for any special occasions and kids will also enjoy the flavours of mango. 

    Hacks

    Have more time : Wash and soak raw rice for 2 hours. Grind the soaked raw rice into a smooth paste. Once mango is cooked, axdd this raw rice batter and cook for 2 minutes. Instead of using rice flour, try this method.

    Want creamier : Add ¼ cup of coconut milk for a creamy and tropical flavoured mambala kaadi. 

    Ingredients

    Ripe mangoes : Use fresh and ripe mangoes. They taste so sweet and soft and also cook easily. Any variety of mango like banganapalli, kesar, and alphonso works for this recipe. 

    Jaggery : Use good quality jaggery powder or palm jaggery. Break the jaggery, melt it with water to remove any impurities. 

    Water : Water is used to cook the mangoes and also to melt the jaggery. 

    Cardamom powder : Cardamom powder is an aromatic agent and enhances the flavour of the recipe. 

    Dry ginger powder : Dry ginger powder also known as sukku podi in Tamil. It has a pungent, warm flavour and with a hint of sweetness. 

    Rice flour : Rice flour is added for the thickness and gives a smooth texture. You can use homemade or store bought rice flour, both work well. 

    Instant Mambazha Kaadi (Step by Step)

     
    Take a mango
    cut the top off
    cut in half
    then again in half
    all done
    take jaggery in a pot
    add water
    heat to dissolve
    place a strainer over a bowl
    pour the hot liquid 
    all strained
    pour it back into the pot
    add the mangoes in
    bring it to boil
    simmer for a while
    now take rice flour in a bowl
    add water
    mix to dilute
    add the rice flour mix in the mango kaadi
    mix well so it gets thick
    all cooked
    add in cardamom powder
    add in dry ginger powder
    mix well
    done
    serve

    Equipment

    Cooking pot

    Ingredients
      

    • 4 medium Ripe Sweet Mangoes sliced
    • 2 cups Jaggery grated
    • 4 cups Water
    • 1 teaspoon Ground Cardamom
    • 1 teaspoon Dry Ginger Powder

    Rice Flour Slurry

    • 3 tablespoon Rice Flour
    • ¼ cup Water

    Instructions
     

    • Cut both side of the ripe mangoes and cut in half. Reserve the seed. Do the same to all mangoes.
    • Take jaggery in a pot, add water and heat to melt. Once melted pour it over strainer and strain it.
    • Pour it back to the pot, add the ripe mangoes in the jaggery and boil it, cook till the mangoes are done.
    • Now take rice flour in a bowl and add some water. Mix well to dissolve.
    • Add the rice flour mix to the cooked mangoes and mix well. Cook for 5 mins.
    • Add in cardamom and dry ginger powder. Mix well.
    • Serve.

    Expert Tips

    • Add a teaspoon of ghee for richness and for an aromatic flavour.
    • Use fresh and ripe mangoes as they add sweetness to kaadi and also cook soft. 
    • You can use good quality jaggery powder directly without making syrup. 
    • Mix the rice flour with water without any lumps. 
    • Don't overcook after adding rice flour paste, it may become too thick.

    Storage & Serving

    Mambala kaadi tastes best when served fresh. Serve them in a bowl or during vaikasi visaga pooja or it can also be served as an after meal dessert. 

    If you like to store the mambala kaadi, put them in an airtight container and store it in the refrigerator. It stays good for 1 to 2 days. Reheat gently to warm and enjoy the mango goodness. 

    FAQ 

    Q.Can I use frozen mangoes ? 

    Yes you can use frozen mangoes if fresh and ripe mangoes are not available. Just thaw them completely before cooking. The taste and sweetness may differ, but it works. 

    Q.Can I substitute jaggery with other sweeteners ?

    Jaggery is preferred in traditional recipes for its color and rich taste. You can substitute with regular white sugar, but the taste and look will differ. 

    Q. Is this a vegan recipe? 

    Yes, it is a completely vegan sweet recipe. Since it does not use any dairy products like milk or ghee. 

    Variations

    Panchamirtham : Panchamirtham is also one of the authentic recipes made and served for Lord Murugan. It is served as prasadam in temples. It is prepared by mixing banana, jaggery, cardamom powder and grated coconut together and letting it rest. The taste of panchamirtham enhances over time. 

    Nadan mambazha kuzhambu : Mambazha kuzhambu is a spicy curry made with ripe mangoes. The sweetness of mango blended with the spices like coconut, green chilli, tamarind results in a sweet, spicy and tangy curry. Serve hot with rice and enjoy.
