Pongal Kootu Recipe with step by step pictures. This is made with Sweet Potato ,Yam Ordinary,White Pumpkin and Pumpkin. Also known as 7 Kari Kootu Recipe or Ezhukari Kuzhambu.

Pongal kootu
Pongal kootu is not the traditional one which we make at home. In my native during Pongal we make normal raw rice pongal, sweet sarkarai pongal, sambar, papadum and coconut thogayal. But I have been seeing this curry in many blog, so I decided to give it a try. And I made it today for Pongal and enjoyed it with raw rice pongal.
I used a mix of veggies which I had on hand, you can use whatever veggies you like. On a total you need 7 vegetables. You can add mochai as well. I used the veggies which I love and it includes many hard veggies like potatoes, pumpkin, sweet potatoes and yam, and some soft veggies like white pumpkin and snake gourd. I loved this combo.

Ingredients for 7 Kari Kootu
- Sweet Potato / Cheeni Kizhangu- 1 cup peeled and cubed
- Yam Ordinary / Karunai Kizhangu - 1 cup peeled and cubed
- Raw Banana / Vazhakkai - 1 peeled and cubed
- Snake Gourd / Pudalangai - 1 cup chopped
- White Pumpkin / Ash Gourd- 1 cup peeled and cubed
- Pumpkin / Poosanikai - 2 cups peeled and cubed
- Potato - 1 peeled and cubed

How to Make Pongal Kootu
Cooking Dal - start by cooking moong dal. You have to cook them separately and later mix with cooked veggies.
Make coconut masala - this is what brings the curry together and adds flavour.
Cooking Vegetables - I like to cut all my veggies same size and cook them with salt and turmeric before ming with dal and coconut masala.
Bring all together - combine cooked veggies, coconut masala and dal. Give tempering and mix.

Step by Step Pictures
1)take all your 7 vegetables. You can use any of your favorite combination of vegetables.
I used the veggies which I love and it includes many hard veggies like potatoes, pumpkin, sweet potatoes and yam, and some soft veggies like white pumpkin and snake gourd.

2)Cut them all about the same size. Wash them well and set aside.

3)Cook moong dal in water till it is soft and cooked. Set aside.

4)take coconut, cumin, dry red chillies, rice flour, turmeric and mix well.

4)Grind them into coarse paste.

5)Take all the veggies in a sauce pan.

6)Add enough water for the vegetables to get cooked.

7)Add some turmeric powder.

8)Add in salt.

9)Mix it really well.

10)Cover and cook until veggies are cooked.

11)Now the veggies are cooked.

12)Add in cooked moong dal.

14)Add in coconut paste.

15)Mix well. Simmer for few minutes.

16)Make tempering.

17)Pour over the kootu. Mix well.

18)Serve.

Ingredients
- 1 cup Sweet Potato | Cheeni Kizhangu peeled and cubed
- 1 cup Yam Ordinary | Karunai Kizhangu peeled and cubed
- 1 large Raw Banana | Vazhakkai peeled and cubed
- 1 cup Snake Gourd | Pudalangai chopped
- 1 cup White Pumpkin | Ash Gourd peeled and cubed
- 2 cups Pumpkin | Poosanikai peeled and cubed
- 1 large Potato peeled and cubed
- 1 teaspoon Turmeric Powder
- 2 teaspoon Salt to taste
- 1 cup Water for cooking veggies
For Cooking Moong Dal
- ½ cup Yellow Moong Dal / Pasi Paruppu
- 2 cups Water
For Grinding
- 1 cup Fresh Coconut grated
- 4 no Dry Red Chillies
- 1 teaspoon Cumin Seeds
- 1 tablespoon Rice Flour
- ½ teaspoon Turmeric Powder / Manjal Podi
- ½ cup Water for grinding
For Tempering
- 1 tablespoon Coconut Oil
- 1 teaspoon Mustard Seeds
- 1 teaspoon Cumin Seeds
- 1 teaspoon Split Urad dal
- 2 sprig Curry leaves
Instructions
- Take moong dal in a pan, cover with water and cook till done.
- Take grinding ingredients in a blender, add water little by little and make it into a smooth paste.
- Prepare veggies and wash them well. Now take them in a pot and add in salt, turmeric powder and water. Mix well. Bring it to a boil and cover and simmer the flame and cook for 15 to 20 mins till veggies are done.
- Once the veggies are done, add cooked dal and coconut masala and mix well. Simmer for a further 5 mins.
- Now make tempering by heating oil and crackling the spices, pour this in to the curry and mix well.
- Serve with rice.
