    Soba Noodles & Chicken Salad Recipe

    Soba noodles is very new to me. I have never used them before but i have seen so many recipe using them and i know that they are good for you..These noodles are made with buckwheat and it is chewy and has a more robust texture..

    Normally soba noodles are used in making noodle salad and soups since it has a much meatier taste. I made this simple noodle and chicken salad. If you are vegetarian, instead of chicken add variety of veggies. The dressing which i used in this is really intense and it takes the dish to a whole new level..Hope you will give this a try and let me know how it turns out for you..

    Preparation Time : 10 mins
    Cooking TIme : 30 mins
    Serves : 2

    Ingredients:

    Soba Noodles - 200 grams
    Water lots of it
    Salt - 1 tblspn
    Capsicum / Bell Pepper - 1 sliced thinly
    Spring Onion - 1 chopped finely
    Chicken Breast - 1 large sliced thinly


    For Dressing:
    Olive Oil - ¼ cup
    Soy Sauce - 1 tblspn
    White Wine Vinegar - 2 tblspn or to taste
    Ginger - 1 tblspn grated
    Garlic - 1 tblspn grated
    Sugar - 1 tsp
    Salt to taste
    Pepper - 1 tsp or to taste

    Method:

    Mix all the marinate ingredients well. Pour ¼th of the dressing over the chicken and mix well. 

    Put the chicken in a pan and stir fry them for 5 to 7 mins till it is done. Set aside to cool.

    Cook soba noodles in boiling salted water for 4 mins. Drain it and rinse it with plenty of cold water. Drain it and set aside.

    Now take the noodles in a bowl, add in capsicum, chicken and the dressing toss well.

    Add in spring onion and toss well.

    You can set this aside for 1 hour before serving so the flavours can incorporate.

    This is really a wonderful dressing..so good on steamed fish, chicken or anything

    spoon little dressing over it

    now add in the chicken in the heated pan

    cook them

    keep frying it

    now the chicken is almost done

    set aside

    bring lots of water to a boil a boil

    add salt

    add in soba noodles

    cook them for 4 mins

    now it is done

    drain them
    Pin
    wash them in lots of cold water

    drain them completely

    take them in a bowl

    Add in sliced capsicum

    spoon in some of the dressing

    add in cooked chicken

    toss well
    Pin
    add spring onions

    toss well

    let it sit for few hours. Serve.

      The problem is not at all rectified aarthi..your website is making lot of troubles while opening in mobile.once you open your website in your mobile and click on any recipe.it was redirecting to ads page.and when u click back it is not showing the home page.take necessary action.
