    American Chop suey is a popular American-Chinese cuisine made with crispy noodles topped with sweet tangy sauce made of stir fried vegetables and fried egg.     One of the popular dishes from restaurants around the world. Whenever we have leftover cooked noodles, this dish comes handy to transform the noodles into something so impressive.

    About American Chop suey

    Chop suey is a popular dish in the American - Chinese cuisine. It is usually made with ground meat, vegetables, sauces and eggs. It has become a part of American, British, Chinese, Asian cuisine because of its versatility.

    American chop suey is made with either chicken, pork, shrimp or fish. Mixed vegetables including Chinese cabbage, carrots, bean sprouts, celery is cooked and tossed in sauce which is made with ketchup, soy sauce, sugar and vinegar. The sauce is thickened with a corn starch slurry which gives the gloss it needs. Traditionally chop suey is served with steamed rice but later the Chinese-American form used stir-fried noodles for rice.

    This Restaurant style American Chop suey recipe includes crispy fried noodles, chop suey sauce and fried egg. The noodles is cooked in salted boiling water, strained, coated with some kind of starch and fried till crispy. Chop suey sauce includes onions, garlic, carrots, mushrooms, pepper and cabbage sauted and cooked in sauce like ketchup, soy sauce and sugar. The sauce is thickened with corn starch slurry and topped with fried egg.

    Noodles - you can use any noodles as you prefer. Traditionally egg noodles is used. But in this recipe I used millet noodles.

    Onions & Garlic - add finely chopped fresh garlic which adds so much flavour. you can use sliced onions or spring onions.

    Mixed Vegetables - I used carrots, cabbage, mushrooms, peppers. You can use Chinese cabbage, bok choy, baby corn or bamboo shoots.

    Stock - you can use vegetables stock or chicken stock. If you don't have stock on hand, you can use water.

    Eggs - egg is fried sunny side up and topped over american chop suey.

    Sauces - tomato ketchup, soy sauce, vinegar, sugar & salt.

    Cornstarch - this slurry adds thickness to the sauce.

    Optional - If you want to use protein you can add cubed tofu, sliced chicken, ground meat, shrimp or any sea food in sauce.

    Chop suey sauce can be adapted to your taste and preference. You can make it entirely vegetables or use meat of choice. The sauce is easily customised to your taste and you can taste and adjust.

    Chicken chop suey - add in thinly sliced chicken breast along with vegetables when cooking. You can add chicken stock when cooking the chicken which adds so much flavour.

    Sea food chop suey - saute shrimp or cubed fish in oil and remove it to a bowl. Saute garlic, onions and vegetables if using. Pour sauces and stock (sea food stock preferred). Add shrimp back in along with stock, thicken the sauce with corn starch and serve.

    How to Make Chop suey (3 Easy Steps)

    Chop suey sauce - Heat oil in a pan. Add in garlic, chillies, onions and saute for a minute. Now add in all the vegetables and give a stir. Cook for 3 to 4 minutes. Add in ketchup, soy sauce, chilli garlic paste, vinegar, salt, sugar and black pepper and mix well. Pour in stock and bring it to a boil. Mix cornstarch with some water to form a slurry. Pour the slurry into the vegetables mixture and cook till thickened. Add spring onions and mix.

    Crispy Noodles - Start by cooking the noodles in salted boiling water as per package directions strain the cooked noodles in a colander and spread in a plate and set aside to get dry. Once the noodles are dry, add in corn starch and toss to coat the noodles. Heat oil for deep frying, drop noodles in and fry till crispy. Strain on some paper towel and set aside.

    Serving - Make fried egg. Take fried noodles in a serving dish, pour the sauce over it, top with fried egg and some spring onion. Serve.

    How to Make American Chop Suey (Stepwise Pictures)

    Make Chop suey Sauce

    1)Heat oil in a pan. Add in garlic and green chillies.

    2)Add in sliced onions and saute for few seconds till onions turn light golden.

    3)Add in sliced capsicum, carrots, cabbage and mushrooms if using.

    4)Saute the vegetables for few minutes till cooked.

    5)Add in tomato ketchup, soy sauce.

    6)Add in chilli garlic paste and vinegar.

    7)Add in sugar to taste and mix well.

    8)Pour in vegetable stock or water.

    9)Season the sauce with salt and black pepper.

    10) Mix cornstarch with some water and pour it into the sauce. It will thicken the sauce lightly. Add a handful of chopped spring onions and mix well.

    Crispy Noodles for Chop suey

    12)Bring lots of water to a full boil. Add in salt and mix well.

    13)Add in noodles and cook for 2 to 3 minutes or as per package directions.

    14)Strain the noodles in a colander. Rinse it under cold water. Set aside till it is completely drained. Make sure the noodles is completely strained.

    15)Take the strained noodles in a plate. Sprinkle cornstarch over it and coat it gently so each strand of noodles is coated lightly with cornstarch.

    17)Drop the noodles in hot oil and fry till crispy.

    19)Strain the noodles using a slotted spoon and set aside.

    Serving American Chop suey

    20)Take the fried noodles in a serving plate, spoon some of the sauce on top.

    21)Place a fried egg on top and garnish with spring onions. Serve immediately.

    Expert Tips

    • You can make the chop suey sauce ahead of time and store in fridge. You can reheat when serving and pour over fried noodles.
    • You can cook noodles ahead of time and store in fridge. Coat with cornstarch just before serving and deep fry till crispy.
    • I used millet noodles in this recipe. You can use any noodles of choice.
    • Fried egg is optional. You can skip if you want to keep this completely vegetarian.
    • Chicken, fish, shrimp or any seafood can be used.

    Can we bake noodles instead of deep frying?

    You can air fry or bake noodles for chop suey instead of deep frying. Boil noodles, strain it completely, dry it in a plate. Add in 2 tsp of oil over it and coat it gently. Add cornstarch and toss well. Now pop this in a 180 degree C preheated oven and air fry or bake for 12 to 14 minutes until crispy.

    What is the difference between American chopsuey and Chinese chop suey?

    Equipment

    • Cooking pot
    • Deep fryer or Deep fry pot

    Ingredients

    For Crispy Noodles

    • 200 grams Egg Noodles I used millet noodles
    • 2 tsp Salt to taste
    • 1 litre Water
    • 3 tbsp Cornstarch
    • Oil for Deep frying

    For Chop suey Sauce

    • 1 tbsp Oil
    • 6 Garlic finely chopped
    • 1 Green chillies chopped finely
    • 1 medium Onion sliced thinly
    • 1 medium Carrot juliened
    • ½ cup Cabbage shredded
    • ½ cup Bell pepper | Capsicum sliced thinly
    • 8 Mushrooms sliced thinly
    • 3 tbsp Tomato ketchup
    • 2 tbsp Chilli Garlic paste
    • 2 tsp Soy Sauce
    • 1 tsp Vinegar
    • 1 tsp Sugar
    • Salt to taste Optional
    • 1 tsp Black Pepper
    • 2 cups Vegetable stock or water
    • 1 tbsp Corn Starch
    • 2 Spring Onions chopped finely

    For Serving

    • 2 Egg

    Instructions

    • For making chop suey sauce. Heat oil in a pan. Add in garlic, chillies, onions and saute for a minute. Now add in all the vegetables and give a stir. Cook for 3 to 4 minutes. Add in ketchup, soy sauce, chilli garlic paste, vinegar, salt, sugar and black pepper and mix well. Pour in stock and bring it to a boil. Mix cornstarch with some water to form a slurry. Pour the slurry into the vegetables mixture and cook till thickened. Add spring onions and mix.

      Hi Aarthi, thanks a lot for this recipe.
      I just wanted to know why you didn't add pineapple pieces in the sauce. Actly I really love the sweet n sour taste which comes in between the tasty bites of the chopsuey and for me its really an imp ingredient in this recepie.

      @aarthi dhanraju have to fry the noodles in really hot oil, if your oil is not that hot, then it wont turn out crispy.

      Hi Aarthy,

      I used to prepare many dishes from your site. But yesterday I thought of prepapring vegetable noodles.So i started thinking like that and I ended with this Chopsuey. Taste was superb and everyone in my family loved it. The only problem I found was, I had mixed the sauce and after 15 mnts only everyone came to have it and so it was lil cold thought the noodles were crsipy. Next time i will make sure I will mix only, when everyone comes in :).
