Simple Italian Chicken Salad with Homemade Salad Dressing

I enjoy making and eating salads, specially chicken salads are my favourite. I have already shared a grilled chicken salad recipe which was my all time favourite. Now this has become my favorite. Not only because it is easy to make but it is really delicious and packed with full of protein and flavors. This is a warm salad so it makes a satisfying one bowl lunch or even dinner..

Preparation Time : 5 mins
Cooking Time : 10 mins
Serves: 3


Cherry Tomatoes - 10 cut in half
Lettuce or Cabbage -2 cups shredded
White Onion - 1/4 sliced thinly
Boneless Skinless Chicken Breast -1
Salt to taste
Red Chilli flakes - 1/2 tsp
Italian Salad Dressing as needed (Recipe here)


Preheat oven to 180 degree C.

Take chicken and season with salt and chilli flakes on both sides. Heat a tsp of olive oil in a oven safe pan, place chicken in and cook for 4 to 5 mins on one side. Now flip over and place it in oven and cook for 15 mins. Now remove it and cover with foil and let it rest for 5 mins. Now cut into cubes and set aside

Take lettuce, onions, cherry tomatoes in a bowl, top with cubed chicken and drizzle enough salad dressing over it. Toss and serve.

Serve immediately.

and your other stuffs

take your chicken

season with salt 

sprinkle some pepper or red chilli flakes

place it in a heated pan with some olive oil

sprinkle other side with salt and chilli flakes

flip over

now it is sealed on both sides

put it in oven and cook for 15 mins

remove it and cover with foil 

let it rest for 5 mins

take your cherry tomatoes

cut in half

make your dressing..Recipe here

cut chicken into cubes

place lettuce in a bowl

sprinkle with onions

tomatoes and chicken

take your dressing

spoon it in

serve immediately

  1. Hey Aarthi,I really appreciate your effort in trying many delicious foods and updating your blog regulary. I like all your recipes so much, it is very detailed and easy to follow. however your recipe description are little monotonous, feels like you have certain templates for introduction for all salads, dressing, payasam, popsicles etc etc..This is just an opinion from me.I have no intention of hurting you in any way.But u are trying different recipes from diffreent cusines and I bet you are so talented to try more different recipes. but try to avoid posting similar recipes twice, add more heartfelt introduction of the dishes which you prepare( for some you really do have a story). when i read similar contents for similar recipes i really lose interest in checking them out.I know you I am rambling like an expert which i am definitely not. i have seen many food blogs out there, and ur recipes are awesome but i dont see the qulitative maintenace in them. you can actually have a proper time table for updating, like 3 recipes on wednesday and 3 on sunday something like that.and more heart and soul for the dish you prepare.dont clumsify your blog.it is absolutley beautiful..please keep up the good work and do some innovative things to take your blog to next level.All the best dear.
