    Refreshing summer favourite tender coconut pudding also known as elaneer pudding is made with tender coconut water, coconut flesh, sugar, coconut milk. Elaneer pudding can be set with agar agar powder or gelatin, both version is shared in this blog post. A variation of this recipe is my coconut agar agar jelly and mango coconut jelly.     Tender Coconut Pudding

    I love making puddings, they are so much fun to make and eat. Specially when you are having kids around they make a perfect dish to enjoy. I am doing quite a bit of pudding recipe for the past few days, i have one more pudding recipes coming up as well..This pudding is made with tender coconut and it is highly requested in my blog. The tender coconut gives this pudding a lovely taste and i loved it to the core.

    What is Pudding?

    Pudding is a type of food that can be either a dessert or a savoury dish that is served alongside the main course. There are many forms of puddings like thickened pudding or custard, set pudding or baked | steamed pudding.

    Puddings in the United States are almost always sweet desserts made of milk or fruit juice that is thickened with cornstarch, arrowroot, flour, tapioca, rice, bread, or eggs.

    The original pudding from britain is made by combining ingredients such as butter, flour, cereal, eggs, and/or suet, to create a solid mass. These desserts can be baked, steamed, or boiled.

    Set puddings has some kind of setting ingredients like gelatin or agar agar.

    About Tender Coconut (Elaneer Pudding)

    Tender coconut is fresh, natural, and healthy because it is unprocessed young coconut. It is a pure and delicious energy drink that is high in vitamins, minerals, glucose, fructose, and proteins. It is high in potassium and contains antioxidants.

    When you cut open a tender coconut, you will get a soft juicy coconut flesh, coconut water which is used to make this pudding. Tender coconut flesh, coconut water, sugar, coconut milk or milk, agar agar or gelatin is used to make elaneer pudding.

    You can make elaneer pudding also known as tender coconut pudding, karukku pudding in matter of minutes. All you need is to combine few ingredients and cook together, pour into moulds and set in fridge.

    I have shared two recipes for tender coconut pudding, first one is my go-to recipe. because it uses just tender coconut flesh, water, coconut milk, sugar and agar agar. The end result taste just like tender coconut. The second version is made with gelatin and it has condensed milk added to it. It is equally delicious.

    Tender Coconut Water - Tender coconut is fresh, natural, and healthy because it is unprocessed young coconut. It is a pure and delicious energy drink that is high in vitamins, minerals, glucose, fructose, and proteins. It is high in potassium and contains antioxidants.

    Tender Coconut Flesh - Try to source young tender coconut which has soft flesh for best taste. Matured coconut flesh may be tough for making smooth pudding.

    Coconut Milk - fresh coconut milk is preferred. Squeeze thick coconut milk which adds coconut flavour and taste to the pudding.

    Sugar - I used sugar to sweeten the pudding. I have also shared pudding recipe that has sweetened condensed milk.

    Agar Agar - agar agar is the setting agent. Make sure to use the right measurements else the pudding may turn hard.

    2 Ways Tender Coconut Pudding

    Agar Agar - Agar agar is completely plant based gelatin derived from seaweed. It is a vegan product used in sweets and dessert. Many asian pudding and jelly uses agar agar as main ingredient. You can easily find agar agar powder online. I use this brand of agar agar powder.

    Gelatin - Gelatin or gelatine is a translucent, colorless, flavorless thickening ingredient, derived from collagen taken from animal body parts. Usually it is used to set pudding, jelly and many desserts. This is one of the main ingredient in making gummy bears and candies. 

    Can we use gelatin in elaneer pudding?

    In this blog post I have shared elaneer pudding recipe that is made using agar agar and gelatin. I used powdered agar agar for easy measurement and convenient. But if you prefer using gelatin, you can easily substitute agar agar with gelatin. I have shared the recipe below so make sure you read the entire blog post.

    Naturally tender coconut pudding is vegan. But if you are following the second recipe, make sure you use coconut milk instead of regular milk.

    Pudding Moulds

    Puddings can be set in different moulds. It has a tendency to take on the shape of the moulds you use. So use any moulds as per your preference. 

    Steel Moulds - I used mini steel pudding moulds from daiso which is food grade. It is easily available online. The moulds are completely nonstick. The moulds which I used is 2.4 inches in diameter. I prefer to wash the mould with water and pour mixture while the moulds is still wet. I find it to work. 

    Silicon Moulds - Silicon moulds are so easy to use. You don’t have to grease the silicon moulds. Since they are delicate, I suggest you to place the moulds in a baking tray or plate and then pour mixture in it. Silicon moulds are available in different shapes, sizes. Mini silicon cupcake moulds can be used to set puddings. 

    Ramekins - the more basic convenient way to set a pudding is in ceramic ramekins. Depending on the size of the ramekins the setting time will vary. 

    Baking Tray - If you don’t have the patience to fill individual moulds. Pour the pudding mixture in a greased baking tray or any glass dish to set. Once it is set you can slice and serve.

    How to Make Elaneer Pudding (Stepwise Pictures)

    1)Take tender coconut flesh in a blender. Make sure you remove the peel from the tender coconut. It is better to use tender young coconut.

    2)Add sugar into the tender coconut flesh.

    3)Grind tender coconut and sugar into a smooth puree. Don't add water when grinding. Make sure the puree is smooth.

    Melt Agar Agar

    4)Take tender coconut water in a sauce pan. This helps make the pudding more coconuty.

    5)Add in agar agar powder into the coconut water.

    6)Whisk the agar agar powder into the coconut water so it melts completely and evenly.

    7)Place the pan on heat and keep mixing. Bring it to a full boil.

    Make Elaneer Pudding Mix

    8)Add in the tender coconut puree into the agar agar liquid.

    9)Pour in thick coconut milk into the sauce pan. Use thick extract of coconut milk.

    10)Whisk well so it is completely mixed into the agar agar liquid.

    11)Elaneer pudding mixture is ready. It has to be thick and creamy.

    Setting Elaneer Pudding

    12)I am using these mini pudding moulds. Make sure you wash them and place it on a baking tray.

    13)Spoon some chopped tender coconut flesh into each moulds.

    14)Pour tender coconut pudding mixture into the mould. Place the pudding into the fridge and allow it to set for 2 to 3 hours.

    15)Gently ease the sides of the mould. carefully de mould the pudding from the mould onto the serving plate.

    Tender Coconut Pudding (with Gelatin)

    This recipe for making tender coconut pudding or elaneer pudding is made using gelatin and condensed milk. If you want to use agar agar in this same recipe, you can use around 1.5 tsp agar agar powder.

    Ingredients Used

    • 1 cup Tender Coconut Water
    • 1 cup Tender Coconut Flesh
    • 1 cup Sweetened Condensed Milk 
    • 1 cup Milk or Coconut milk 
    • 2 tbsp Sugar
    • 1 tsp Vanilla Extract 
    • 1.5 tbsp Gelatin or 1.5 tsp Agar Agar Powder

    How to Make Tender Coconut Pudding

    Puree Tender Coconut Flesh

    1)Now take the tender coconut flesh and the coconut water in a blender and puree till smooth. Set aside.

    Bloom & Melt Gelatin

    2)Take gelatin in a sauce pan.

    3)Pour 4 tbsp cold water over gelatin and allow the gelatin to bloom for 10 minutes.

    4)Place the bloomed gelatin on heat. Cook on low heat till gelatin is completely melted.

    Making Tender Coconut Pudding Mix

    5)Take sweetened condensed milk in a pot.

    6)Add in sugar into the condensed milk.

    7)Pour milk into the condensed milk and sugar into the cooking pot.

    8)Place the cooking pot on heat and cook on low heat till sugar is melted completely.

    9)Add in tender coconut flesh into the milk mixture.

    10)Add in the melted gelatin mixture and mix well.

    11)Finally add in the chopped tender coconut flesh.

    12)Add in vanilla extract and mix well.

    Setting Pudding

    14)Pour the tender coconut mix into the mould. You can use small or big mould as per your liking.

    15)Place the bowl into the fridge and allow it to set in fridge for few hours.

    16)Once set, de mould the pudding from the mould onto a serving plate.

    Expert Tips

    • Use the correct amount of agar agar or gelatin, else the pudding may get hard.
    • Always cook pudding mix on low medium heat else it may burn in the bottom.
    • try to use young coconut flesh, else the texture will be affected.
    • Tender coconut water adds coconut flavour, so don't skip on that.
    • You can pour the pudding in large baking tray and chill in fridge. Cut into pieces when serving.

    Storage 

    Tender coconut pudding can be stored in fridge upto a week.

    Variations

    Coconut Agar Agar Jelly - This is a layered pudding recipe in which clear tender coconut water is layered in between creamy layer.

    Mango Coconut jelly - when it is mango season make sure you make this jelly, it is super easy and tasty.

    Tembleque - This is a thickened coconut pudding made with coconut milk which is thickened with cornstarch.

    Ingredients

    Tender Coconut Pudding (with Agar Agar)

    • 1 cup Tender Coconut Water
    • 1 cup Tender Coconut Flesh
    • ¾ cup Sugar
    • 1 cup Coconut Milk
    • 1½ tsp Agar Agar powder
    • ½ cup Tender Coconut Flesh cut into pieces

    Tender Coconut Pudding (with Gelatin)

    • 1 cup

      Tender Coconut Water 


    • 1 cup Tender Coconut Flesh
    • 1 cup Sweetened Condensed Milk
    • 1 cup Milk
    • 2 tbsp Sugar
    • 1 tsp Vanilla Extract
    • 1½ tbsp Gelatin

    Instructions

    Tender Coconut Pudding (with Agar Agar)

    • Grind tender coconut flesh and sugar to a smooth puree.
    • Take coconut water in a sauce pan. Sprinkle agar agar powder and mix well. Heat this and bring it to a full boil. Now reduce the flame and add in the tender coconut puree, coconut milk and mix well.
    • Take your pudding mould, spoon some tender coconut flesh into the mould. Pour the coconut pudding mix over the flesh. Place the mould in fridge and let it set for few hours.
    • Demould and serve.

    Tender Coconut Pudding (with Gelatin)

    • Start by taking the gelatin in a sauce pan, cover with water and let it sit for 5 mins. Now heat this gently till it is melted. Set aside. Now take the tender coconut and the coconut water in a blender and puree till smooth. Set aside.


    • Take condensed milk, milk, sugar in a pan, heat till it comes to a boil. Now remove it from heat and add in the tender coconut mix, chopped tender coconut, vanilla and gelatin mix. Mix well.
    • Pour this in a greased mould and let it set for few hours. De mould, slice and serve.

      Ever since my son had tender coconut pudding during one of our visits to Kerala he has been pestering me to make it for him, but i never found a good recipe! Thanks for sharing this, will definitely try! Quick question, how much water should be added to the gelatin?

      I tried the recipe with 2 tbs agar agar, but the pudding did not set...any suggestions if the quantity needs to be increased...can I re add the agar what again and try
