    Aadi Koozh Recipe

    Aadi koozh is a sweet rice flour porridge which is sweet and made specially during the month aadi. It is made with jaggery, coconut, rice flour, cardamom and dry ginger. This is my Amma's recipe which is a sweet koozh than a savoury one.

    This is a simple recipe made using jaggery and rice flour. But the taste is just fantastic. It literally takes just less than 10 mins to make. This is one of the best prasadham for amman. My grandma used to make this for Amman and she tells me it is her favourite.

    About Aadi Koozh

    Aadi koozh is a traditional prasadham recipe made specially during aadi month. So many festivals and events happens in temple all over South India during this month. This is one recipe that is made in many temples to offer as prasadham.

    There are two versions of aadi koozh made. One is a savoury version made with rice, ragi flour, curd, onions, curry leaves and green chillies. This is a sweet version which my Amma makes.

    This one is similar to the Mambazha kaadi or Mango Payasam which we make. But we don't add mango in this. The porridge is made with rice flour, coconut, jaggery, cardamom and dry ginger. It is sweet and aromatic.

    In my home town temples, they make and serve this aadi koozh and aadi kozhukattai which is a tradition followed for many years.

    Ingredients

    • Rice flour - this koozh or porridge recipe is made with rice flour. It is used as thickener in the dish.
    • Jaggery - you can use either jaggery or palm jaggery (karupatti) but I found that jaggery is more mellow.
    • Coconut - freshly grated coconut adds the aroma and texture to the porridge.
    • Flavourings - Dry Ginger Powder and Cardamom powder are the flavourings used in koozh.

    Step by Step Pictures

    1)Start by making the rice flour paste. Take rice flour in a bowl. Add water to it and mix to a smooth paste. The mixture can be slightly runny. Set aside.

    2)Take grated jaggery in a sauce pan. Cover with water so the jaggery is immersed in the water.

    3)Place the sauce pan on medium high heat and bring it to a full boil. Allow the jaggery to melt completely.

    4)Once the jaggery is melted, strain this through a fine mesh sieve. This removes any sediments from the jaggery.

    5)Transfer the jaggery liquid back into the sauce pan. Add in freshly grated coconut into the jaggery water. Allow this to come to a full boil.

    6)Once the mixture comes to a full boil, add in the rice flour paste and mix well.

    7) Mix the rice flour paste into the jaggery liquid. Keep mixing and let it cook for 4 to 5 minutes. The rice flour should be cooked completely. The mix will get thick as well.

    8)Add in ground cardamom and ground dry ginger powder at this point.

    9)Mix the powders well. Turn off the heat. The longer the mixture boil, the more thick it will get.

    10)Allow the koozh to cool down a bit and serve.

    Ingredients

    For Rice Flour Paste

    • ⅓ cup Rice Flour
    • ½ cup Water

    For Jaggery Syrup

    • 1 cup Jaggery powdered coarsely
    • 1½ cup Water

    Flavourings and other ingredients

    • ½ cup Fresh Coconut grated
    • ½ teaspoon Dry Ginger powder
    • ¼ teaspoon Ground Cardamom

    Instructions
     

    • Take rice flour in a bowl, add ½ cup of water and mix to a smooth paste.
    • Take jaggery and 1.5 cup of water and bring it to a boil, cook till jaggery melts. Strain and take it back in the sauce pan.
    • Take the jaggery water back in the sauce pan, add coconut and mix well. Bring it to a boil.
    • Add in the rice flour water and mix well. Cook till it thickens.
    • Add in cardamom and dry ginger powder and mix well.
    • Serve.
