    Apple galette is an easy, rustic dessert that is made with a buttery, flaky crust filled with sweet apples and is full of flavours . Galette is a free form of pie that is much easier to make than a traditional apple pie. You don't need a pie dish or any fancy pie making skills. Just roll out the dough, place the apple filling in the middle and fold the edges over. Then bake until the crust turns golden and the apple becomes soft. It is a perfect treat when you have sudden sweet cravings, it is so warm, comforting and simple homemade dessert. 

    Apple Galette

    I had some shortcrust pastry lying in the fridge for quite few weeks. Suddenly it caught on my eyes. When I decided to use that in my recipes, so many ideas passed through my mind. Finally I decided to make a galette because I saw some apples lying in the fridge too.

    Galette is nothing but a free form pie, in which you don't want a pie dish or a tart pan. So it is easy and kind of rustic. But the taste is so delicious. I added few extra ingredients in my filling like cinnamon, lemon juice and it all worked together beautifully in my butter rich pastry.

    Galette is a free form of pie and is a perfect recipe to use up some seasonal fruits and any pastry dough left at home. The beauty of the galette is that we don't even need to make it look pretty like pie. Beauty of the galette lies in the imperfections of it and also it saves time. 

    When apples are in season, there is nothing better than to bake desserts with them. And rather than making a whole pie, this easy apple galette is rustic and stress free. Juicy apple filling is wrapped up in a crispy, flaky pie crust. This is the galette to make for summer holidays, kids parties, evening snacks or for special occasions. 

    To make an apple galette, start by mixing the thinly sliced apples with sugar, cinnamon, and lemon juice. Then roll out the pastry sheets, stuff with the apple filling and assemble the galette by folding the pastry edges up over the apples. Bake until the crust is golden brown and the apples are tender. 

    This will be one of the easiest and tastiest desserts you will ever bake! It is made using the shortcrust pastry which gives a flaky, buttery base. You can also add a pinch of nutmeg or a drop of vanilla essence for a warm flavour.

    Serve these delicious apple galettes with a scoop of vanilla ice cream and drizzle some caramel sauce on top.

    WHY I LOVE THIS RECIPE  - Apple galette is a delicious apple dessert and also it's a super quick version of apple pie. I love this recipe because it is not complicated as it doesn't need a special pan or folding techniques like traditional apple pie. You just put the apple filling on the dough, fold the edges and bake to a golden crust. And you made a scrumptious dessert in no time. Apple galettes are perfect for any occasion, whether for hosting a party, kids evening snack or to satisfy the sudden sweet craving.

    Freezer friendly : The unbaked apple galette can be freezed for later use. Just wrap the galette and pop it in the freezer. Whenever you crave for some desserts, just bake it straight from the freezer. Serve with a scoop of ice cream and drizzle some caramel sauce. 

    Versatile : Galette recipe is so versatile and adaptable. You can make the galette using any fruit filling of your choice or you can even make a savoury version of galette using mushroom or chicken filling. 

    Ingredients

    Basic Shortcrust Pastry : I have used my homemade puff pastry dough. You can even use store bought pastry sheets. Having homemade or readymade sheets in advance will make the process quick and easy. 

    Sugar : I have used granulated white sugar. You can use any sweeteners of your choice like coconut sugar, jaggery, brown sugar, agave and maple syrup. Adjust the quantity of sugar based on your preference. 

    Butter : I have used unsalted butter. Melt the butter to brush the baking tray and the pastry sheets to achieve the golden crust. 

    Apple : Use any fresh and juicy apples. Any variety works for this recipe like granny smith, fuji or gala. Apple should be thinly sliced for making galette. 

    Lemon juice : Lemon juice is added to enhance the flavours and also to avoid apples turning brown. If you are using any green apples, then add less or no lemon juice based on the tartness of the apple. 

    Cinnamon : Cinnamon is a must for any apple dessert. Use the best quality cinnamon powder for making apple galette, it adds a subtle sweetness and aroma to the recipe. You can even add a pinch of nutmeg powder or vanilla essence for flavouring. 

    Jam : Jam is added for the extra sweetness and to balance the apple sweet filling. I have used store bought strawberry jam to fill the pastry sheets. You can use any berry or other fruit jam of your choice. 

    Hacks

    Preheating the oven : Preheat the oven to 200 degree celsius. In a baking tray, spread the foil and brush it with melted butter. 

    Filling : Wash and peel the apple skin and slice them thinly. In a bowl, add thinly sliced apples, butter, cinnamon, sugar, and lemon juice. Mix them well using a spoon or toss them well to evenly coat. 

    Shaping the dough : I have used homemade pastry dough. Divide the dough into two portions and roll them thinly. The dough should be cold enough while rolling as it helps to hold the shape while baking. 

    Arranging : To the rolled dough, stuff with the prepared apple filling, fold the edges over. Brush with melted butter on top. 

    Bake : Bake the folded apple galette in the preheated oven for about 30 to 40 minutes. The apples will start to look tender and the pastry will be beautifully golden crusted. 

    Cooling : Remove the tray from the oven after baking. Let it cool for about 15 to 30 minutes. Serve with a scoop of ice cream or drizzle some maple syrup or caramel syrup on top. 

    Optional golden glaze : For a beautiful golden crust, whisk one egg with a tablespoon of water. Brush the beaten egg over the folded pastry dough and bake.

    Take a juicy crunchy apple..I used gala variety
    peel off the skin
     
    slice them and deseed them
    slice them thinly
    take them in a bowl
    add a dash of cinnamon
    squeeze little lemon juice
    add in sugar
    add a tblspn of melted butter
    toss well..
    Now take basic shortcrust pastry
    roll it between two sheets of plastic wrap
    peel the top layer of plastic wrap
    flip that over a well buttered foil lined baking tray
    now peel off the top layer
     
     
     
    Now take some jam..i used strawberry
    spoon a little over the sheet
    spread it lightly..leave a border
    start arranging the apples
    go like a fan shape
     
    i placed some in the center as well
    now just fold from the ends
    like this
    take some sugar and sprinkle on top
    take some melted butter
    pour all over the apples
    apply butter over the pastry as well
    now it is time to bake
    Now it is baked..smells just cinnamony..
    When it is cooled slightly..remove to a plate
    Enjoy with some ice cream..
     

    Expert Tips

    • Add thinly sliced apples so they bake nice and tender. 
    • For a sweet and nutty flavour, add a dash of nutmeg powder to the filling. 
    • Refrigerate the assembled apple galette for a few hours before baking. This helps the dough to hold its shape, when baked.
    • The dough pastry should be cold enough when rolling out as it ensures golden crust when baked. 
    • Don't overfill with apples as it may lead to soggy and uneven cooking.
    • It is completely optional to brush the crust with egg wash ( one beaten egg mixed with a splash of water) for a golden brown shine.
    • Let the galette completely cool off before slicing. 
    • Dust some powdered sugar or sprinkle with roasted nuts like walnuts, almonds on top of the crust. It adds a nice crunch and sweetness flavour. 

    Storage

    Apple galette can be stored at room temperature for a day. For longer storage, store the leftover apple galette in an airtight container or tightly cover with cling wrap. It stays good for a week in the refrigerator. Reheat them using an oven to make the crust warm and crispy. 

    Serving

    Slice and serve the apple galette, it can be enjoyed on its own. It can also be served with various topping options like scoop of vanilla ice cream or drizzle of caramel sauce, maple syrup or a dollop of freshly whipped cream works. It can be enjoyed as an after meal dessert or for kids evening snack. 

    FAQ 

    1 . What is galette ? 

    Galette is a rustic, free form of pie recipe made without any pie dish. You just roll out the dough, place the filling inside, cover and bake till golden crisp. 

    2. Do I have to peel the apple skin?

    The apple skin needs to be peeled before making the filling. As the skin may get tough and chewy while baking. It is highly recommended to remove the skin. 

    3.Why does my galette become soggy? 

    This may be due to overfilling of the apple or slicing them before it cools off. Allow the galette to completely cool before slicing. 

    4.Can I use other fruits for filling ? 

    Absolutely! Yes, you can. The Galette recipe is so versatile that you can customize it according to your preferred fruit filling like pear, strawberry, blueberry, mango or pineapple. Adjust the sugar quantity based on the sweetness of the fruits that you are using. 

    5.Can I use store bought pastry sheets ? 

    Yes. If you're short on time, you can use readymade sheets for baking. As both the homemade and store bought sheets work really well. 

    6.What kind of apple works well for this recipe ? 

    Well, you can use any variety of apple like granny smith, fuji, gala, honey crispy. Make sure the apples are firm and avoid super sweet apples as they may turn mushy, and make the galette soggy. 

    Variations

    Apple pie : Apple pie is a classic dessert that is typically made with pastry dough, filled with cooked sweet, buttery apples and baked using a pie dish. The shape of the pie will be like a structured one. It is served with a scoop of ice cream or whipped cream.

    Apple mix fruits galette : To add a fruity twist to the galette, make the filling using apple and with some mixed fruits like cranberry, strawberry or pear, toss them with sugar, cinnamon and lemon juice. Fold the pastry dough with the filling and bake to golden crust. 

    Savoury galette : You can also make a savoury version of the galette. To make that prepare a filling using mushroom, chicken or paneer and toss them with herbs, spices, oil and salt. Fold and bake them until golden brown. It will be similar to the savoury puff we get from the bakery. It is a great way to enjoy a party appetizer or for kids evening snack.

    Equipment

    Ingredients

    • ½ batch Short Crust Pastry
    • 2 tablespoon Sugar
    • 2 tablespoon Unsalted Butter melted

    For Filling

    • 3 large Apples i used gala
    • 1 teaspoon Lemon Juice
    • 1 teaspoon Ground Cinnamon
    • 4 tablespoon Sugar
    • 2 tablespoon Melted Butter
    • 2 tablespoon Jam i used strawberry

    Instructions

    • Preheat oven to 200 degree C. Line a baking sheet with foil and butter it really well. Set aside.
    • Peel, chop, deseed apple and slice them thinly. Take them in a bowl, add in sugar, cinnamon, lemon juice, melted butter and toss well.
    • Now take your pastry, divide it into two portions. Roll each dough between two sheets of plastic wrap thinly. Peel the top layer of plastic. flip it over a well buttered foil lined baking sheet. Peel off the top layer as well.
    • Now spoon a tablespoon of jam on to them and spread it, leaving a border around the edges.
    • Arrange the apples and bring the pastry in to create a border. Seam the edges as well.
    • Now brush the edges with butter, sprinkle some sugar on top of apples and drizzle some butter as well.
    • Bake this for 35 to 45 mins until the pastry is golden and apples is cooked and the tart is bubbly.
    • Remove it from oven and let it sit for 10 mins.
    • Now remove it from tray and serve with a scoop of ice cream.
