    I made this kootu so many days before and served it with paruppu rasam and vazhakkai chukka fry. It was truly yummy. You can check out my other kootu recipes and spinach recipes too..

    Preparation Time : 10 mins
    Cooking Time : 25 to 30 mins
    Serves : 4 to 5
    Ingredients:
    Red Spinach leaves / Amaranth - 3 cup chopped finely
    Yellow Split Moong Dal / Pasi paruppu - ½ cup
    Salt to taste
    For Grinding:
    Fresh Coconut - ½ cup Grated
    Dry Red Chilli - 2
    Cumin Seeds / Jeerakam - 1 tsp

    For Seasoning:
    Ghee - 1 tblspn
    Mustard Seeds / Kaduku - 1 tsp
    Urad dal / Ulundu Paruppu - 1 tsp

    Method:
    Take all grinding ingredients in a blender, add make it into a coarse mixture.
    Take dal, spinach and water in a sauce pan and cook till dal is done.

    Add salt and mix well.

    Add in ground masala. Mix well. Adjust the consistency with some water.Let this simmer for 5 mins..
    Now make seasoning by heating ghee and frying all seasoning ingredients in it. Pour this over the kootu and mix well.
    Serve with rice.
