    Parsley Cashew Pesto Recipe

    Pesto is such a versatile ingredient to have on hand..It is best tossed with some pasta or used as a spread for sandwich..

    Preparation Time : 5 mins
    Makes : 1 cup


    Ingredients:

    Parsley - 2 cups packed
    Cashews - ½ cup
    Garlic - 2 cloves
    Parmesan Cheese - ½ cup
    Olive Oil - ¼ cup

    Method:

    Take all ingredients except oil in a blender and puree. Slowly drizzle in oil and puree till smooth.

    Transfer it to a air tight container and refrigerate till needed.

    Taste great when tossed with some pasta or used as a spread for sandwiches.
