This is the roast which i made when i tried out the turkey curry. And it was a instant hit with the family. The flavour of coconut played an important role in this roast. It just coated all the turkey beautifully. Loved it to the core.

Ingredients for Turkey Coconut Roast
For Cooking Turkey:
- Turkey / Vaan Kozhi - 500 grams chopped
- Salt to taste
- Chilli Powder - 2 tsp
- Turmeric Powder / Manjal Podi - 1 tsp
- Water - 1 cup
Grinding:
- Coconut - 1 cup grated
- Fennel Seeds / Sombu / Saunf - 1 tblspn
- Cinnamon / Pattai - 5 cm piece
For Masala:
- Coconut Oil - 3 tblspn
- Onion - 1 large sliced thinly
- Green Chillies - 3 slit
- Ginger Garlic Paste - 1 tblspn
- Chilli Powder - 2 tsp
- Coriander Powder / Malli Podi - 1.5 tblspn
- Garam Masala Powder - 2 tsp
- Salt to taste
- Capsicum - 1 large sliced
- Lemon Juice to taste
- Coriander leaves a handful chopped
How to Make Turkey Coconut Roast
- In a pressure cooker, take turkey, salt, chilli powder and turmeric powder. Add some water and pressure cook for 3 whistle. Then simmer the flame and cook for 15 mins.
- Now turn off the heat and let the pressure go all by itself. Open the cooker, drain the meat in a bowl. Use the liquid for soup or making rasam.
- Take coconut and other ingredients mentioned in a blender and make it into a coarse mix. Dont add water.
- Heat oil in a kadai. Add in onions, chillies and saute till light golden.
- Add in ginger garlic paste and saute for a min.
- Now add in salt, chilli powder, coriander and garam masala powder and saute for 30 sec or so.
- Add in the meat and toss well in the masala. Keep cooking till it gets nice colour.
- Add in capsicum and toss well for few more mins.
- Then add in coconut masala and mix well. Cook this for few more mins as well.
- Add in lemon juice and coriander leaves.
- Serve hot.
