    Simple Mutton Roast Recipe / Kerala Mutton Roast Recipe

    Couple weeks back, hubby got some fresh mutton to cook. I was looking for a different recipe other than my mutton thoran, mutton chukka, mutton kuzhambu, chettinaad style gravy and mutton masala. You can check my mutton recipes here..I wanted to do a fried kind of dish. Actually i planned to cook the mutton and deep fry it. But somehow i ended up like this.

    I will soon share a fried mutton recipe. This one is less fat i can say, since it is roasted in little oil. Actually the main flavouring for this mutton dish is curry leaves and fennel seeds. I added some kashmiri red chillies to make the dish turn out red.

    Preparation Time : 10 mins
    Marinating Time : 15 mins
    Cooking Time : 45 to 50 mins
    Serves : 4 to 5

    Ingredients:
    Mutton - 500 grams
    Turmeric Powder / Manjal Podi - 1 tsp
    Salt to taste
    Coconut Oil - 2 tblspn
    Curry Leaves a handful
    Roasted Gramdal / Pori kadalai / Pottu Kadalai - 2 tblspn powdered

    For grinding:
    Fennel Seeds / Sombu / Saunf - 1 tblspn
    Kashmiri Red Chilli - 5
    Red Chilli Powder - 2 tblspn
    Ginger - 3 cm piece
    Garlic - 6 fat cloves
    Method:
    Take mutton in a bowl, add in salt and turmeric powder and mix well. Leave this to marinate for 15 mins.
    Now take a blender, add in all grinding ingredients and make it into a puree by adding some water.
    Add this puree to the mutton and mix well. Wash the blender with ¼ cup of water and pour that over the mutton as well.
    Transfer this to a pressure cooker and cook it for 3 whistle, simmer it for 20 mins. Turn the heat off and let the pressure go all by itself.
    Open the pressure cooker and heat again, dry out the mutton.
    Once it is dried, heat coconut oil in a kadai. Add a handful of curry leaves in it. Add in the dried mutton and toss well for 5 mins till it is well roasted.
    Add in gram dal powder and toss again for 10 mins.
    Once the mutton turn golden and well roasted, turn off the heat and serve.

    i added some kashmiri red chillies, which are optional

    now time to blend

    make it into a smooth paste

    add the paste to the mutton

    i washed the blender with ¼ cup of water

    add that to the mutton

    mix well

    take a pressure cooker

    add the mutton

    cover

    Pressure cook

    now the mutton is done

    put it back on stove to evaporate the water

    look the mutton is now dry

    no water is left

    Now heat coconut oil in a kadai

    add a handful of curry leaves

    add the mutton piece

    saute..saute..saute..

    cook till it gets nicely coloured

    toss well

    all roasted

      Hi Aarthi I am a big fan of your cooking and your blog has been helping me in almost everyday's cooking and the best part is the pictures which I love so much, I am a bit lazy to read some times a whole huge paras but this is where your blog is very very special to me I can just start cooking only looking at the pictures. I am going to try this motton roast today will post pic n let you know how it came out. Why potty kadalai is added does it not reduce the spices or change the flavor at the end .. ? Thanks !

      Hi, I have tried this recipe many times and it has never gone wrong. Thank you so much. I usually make a kilo of mutton for family and i always doubled all the ingredients. And it worked out fine. BUT...now i have to cook for ten of my friends and that meant getting 3kgs of mutton. But somehow....2 tbsp chilly powder and 6 pieces chilly pieces for 500g translated to 3kgs is 12 tbsp chilly powder and 36 piece of dry chilly sounds extremely scary. Please help. What do i do? 🙁
