Its been a while since I shared any mutton recipe here. Yesterday hubby bought some mutton and I made two recipes for you all. It is a Keralan style chilli mutton roast and a Chinese chilli mutton. Both of them turned out so good.

About Mutton Roast (Chilli Mutton)
Mutton is also known as lamb or goat which is cooked many different ways in and around India. Some of the most popular way of cooking mutton in South India is mutton sukka, mutton kuzhambu, pepper mutton and this mutton roast. Mutton roast is nothing but a dry preparation of mutton made with onions, chillies, garlic and spices.
It can be made many different ways, but I like to cook it this way. First I ensure to cook the mutton in a pressure cooker for faster cooking. Prepare a masala with onions, tomatoes, spices. I make a fresh paste made with garlic and dry red chillies in the masala which adds a spicy aroma to the whole dish. Finally cooked mutton is added and roasted on medium low flame till it caramelizes. Hence the name mutton roast.
You can enjoy this as a side dish for rice, appam, malabar parotta or idiyappam. Sometimes we enjoy it with puttu too.

Mutton Roast Ingredients
Mutton - Choose young mutton which cooks faster than older meat. I use a pressure cooker to cook the lamb, but you can use instant pot or cook on normal pan which will take time. You can marinate the mutton with ginger, garlic, salt and spices. But I marinated with salt, pepper, ginger garlic paste and lemon juice.
Onions - Onions forms the base for the masala. You can use shallots instead of onions as well.
Tomatoes - You can use chopped tomatoes or pureed tomatoes to form the base of the masala.
Ginger & Garlic - be generous with the ginger and garlic, which helps remove the raw smell of the meat.
Spice powders - regular combination of spices like chilli powder, coriander, turmeric powder, garam masala and pepper is used.
Dry chillies and garlic - a special paste of garlic and dry red chillies added to the mutton roast makes this spicy and aromatic.
How to Make Mutton Roast (Stepwise Pictures)
Marinating Mutton
1)Take mutton in a bowl. I like to use boneless mutton for this recipe.
2)Add in black pepper powder, salt, ginger, garlic and lemon juice. Mix well and allow it to marinate for 30 minutes.
3)You can add in some chilli powder in this if you want to.
Pressure cooking Mutton
4)Once the mutton is marinated, add it to pressure cooker. Take it in a pressure cooker and cook for 6 to 7 whistle.
5)Take it off the heat and let the steam escape by itself. Set aside.
Grinding Masala
6)Take dry red chillies and garlic in a blender.
7)Add some water and make it into a coarse paste. set this aside till needed
Making Mutton Roast Base
8)Heat coconut oil in a pan. Add in fennel seeds, cinnamon, curry leaves. Let them sizzle in the oil for few minutes.
9)Add in finely chopped onions and slightly crushed garlic cloves.
10)Cook the onions till slightly golden brown.
11)Once the onions gets golden brown. Add in tomatoes and mix well.
12)Now add in the ground dry red chilli and garlic paste.
13)Cook all together until oil separates from the mixture and masala is done.
14)Add in all the spice powders and mix well.
15)Cook until the raw smell of the spices is gone. Let the spices cook in the oil.
Making Mutton Roast
16)Add in cooked mutton and toss well in the masala.
17)Toss the mutton in the masala. Let it cook on low heat for 10 minutes.
18)Add in black pepper powder, coriander leaves. Toss well in the masala.
19)Serve mutton roast with parotta.
Expert Tips
- You can use boneless mutton or mutton with bone-in.
- Add in chopped shallots instead of onions. Tomato puree can be used instead of chopped tomatoes.
- You can cook mutton in a pressure cooker or instant pot.
- You can use ghee or regular oil instead of coconut oil.

Ingredients
- ½ kg Boneless Mutton
- Salt to taste
- 1 tbsp Ginger Garlic Paste
- 1 tbsp Lemon Juice or Vinegar
FOR MASALA
- 4 tbsp Coconut Oil
- 1 inch Cinnamon Stick
- 2 tsp Fennel Seeds
- 2 sprig Curry leaves
- 1 large Onions chopped finely
- 6 cloves Garlic peeled
- 2 large Tomato chopped finely
- 1 tbsp Kashmiri Chilli powder
- 2 tbsp Coriander Powder
- 2 tsp Cumin Powder
- 2 tsp Garam Masala Powder
- Salt to taste
- 1 tsp Black Pepper Powder
- Coriander Leaves a handful chopped
TO GRIND
- 6 cloves Garlic peeled
- 5 no Dry Red Chillies
Instructions
- Take mutton, salt, ginger garlic paste and lemon juice in a bowl and mix well. Take it in a pressure cooker and cook for 6 to 7 whistle. Take it off the heat and let the steam escape by itself. Set aside.
- Grind chillies and garlic to a coarse paste.
- Heat oil in a pan, add in whole spices and curry leaves. Add in onions and garlic. Cook till golden. Add in tomatoes and chilli garlic paste and saute well. Cover and cook till tomatoes get mushy. Add in all spice powders and salt. Stir and cook on medium heat till oil separates.
- Now add in cooked mutton and mix well. Cook on low heat till water dries and gets roast. Add in black pepper powder and coriander leaves. Serve.

Hi, I have tried this recipe many times and it has never gone wrong. Thank you so much. I usually make a kilo of mutton for family and i always doubled all the ingredients. And it worked out fine. BUT...now i have to cook for ten of my friends and that meant getting 3kgs of mutton. But somehow....2 tbsp chilly powder and 6 pieces chilly pieces for 500g translated to 3kgs is 12 tbsp chilly powder and 36 piece of dry chilly sounds extremely scary. Please help. What do i do? 🙁
